Baamya (okra sauce)

One of my favourite dishes is baamya. I love the okra and the tangy flavour!! I did not want to put this up, because I did not make this on my own like I normally do when I upload recipes, but my mum insisted I did because she said I was doing the main part, she was just assisting. Nonetheless, now we all can do this recipe on our own for next time, to enjoy this amazing meal inshAllah :)

Chicken & broccoli pasta with bechamel sauce

I have made this before, and for days I have been wanting to make it...because I find it sooo tasty and yummy and easy and just....ok, I will calm down and share the recipe :)

Red lentil soup

We call this Libyan soup at home, mainly because my mum got this recipe off her Libyan friend, lol. So I thought maybe it is best I stick with red lentil soup as a name instead, as it may have a special name for Libyan's which we do not know about.

Iced chocolate traybake

I have had my eye on this recipe, the sound of iced chocolate cake was quite appealing. So here is the recipe to this soft cake. Adding the icing is completely up to you, but in case you wanted, instructions are below:

Fried chicken in breadcrumbs

There is a variety of ways to make fried chicken, usually using eggs. But I do not use eggs, instead I use milk to act as the binding agent. It isn't difficult, maybe just a little fiddly with the hands, but I will try my best to explain below. Please note you can vary the measurements according to your needs. You may be shocked by the spices I add to the flour, but I tend to just add a little of everything just for the fun of it :)

Pancakes

I have tried to make pancakes once before, and it didn't turn out as good as I wanted, so I did not post up the recipe. Although I failed on my first attempt, I was still keen to find a recipe that actually works...and guess what, this pancake recipe is just soo yummy! (Lesson to myself: never quit, if you want to make good pancakes, you have to persevere and you will get there in the end! lol) <-- great moral! Soo...here is the recipe, I hope you try it out, play around with the toppings, and let me know if you have an even better recipe..

Spiced pear & cranberry cupcakes

I think it has become evident now that I love pears in desserts...so the sound of spiced pear and cranberry cupcakes was very appealing. Plus I had all the ingredients needed at hand...so here goes the recipe for these lovely cupcakes..

Pizza in a Pitta

This may not be an actual recipe, but it is a lovely treat to have from time to time. I love it, so I thought I would share it with you. There are no specific measurements (I will put approximations below), as you can add as much or as little as you want...and you can vary it according to how you like it. I will put the basic pizza in a pitta sandwich below, and then I will put the extras you can add if you wanted.

Victoria sandwich cake

I wanted to make something that would please all, as sometimes people don't like certain things in their desserts...so what is better as a neutral cake than a victoria sandwich cake?

Orange & sultana cake

I actually wasn't planning on making anything today, but funnily enough, the family requested it. So here is a simple yet tasty orange and sultana cake :)

Tuesday, 18 December 2012

Aubergine & courgette pasta

I wanted to use up the aubergine and courgettes we had in the fridge, something quick, simple and to be honest...I just wanted an excuse to cook. Of course making pasta is not rocket science, so here is an aubergine and courgette pasta I made up as I went along...therefore quantities are not exact and you can vary them according to what you have at hand.

Iced lemon traybake

I cannot emphasise just how much I would love everyone to make this recipe!!  It is so simple yet sooooo tasty! I personally love lemony food, but even my little sister who doesn't, loved these! Please give them a go - you wont regret it!

Chicken pilau-style rice

The long awaited,  highly requested Nosaiba-style chicken pilau-style rice. I found this recipe years back, and have adapted it slightly according to how I like it (mainly increasing the quantity of onions and garlic).

Profiteroles with cream filling

Ready made profiteroles are indeed a treat, I'm sure you would agree! So when I came across the recipe, I thought hmm...this might be a challenge to make, but it is a challenge I am willing to try....so off I went :)

Butternut squash snack

I bought butternut squash - with the aim of cooking something with it. I just never got round to doing so, and the label said use within 10 days...and to be honest, I think I had gone beyond 10...so I thought why not un-complicate things and do something super super simple, made up from a simple brain like mine :)

This will probably not qualify as a recipe, but I thought why not share it, maybe one day you might fancy snacking on this too :)

Chocolate mousse using creme fraiche

I had bought creme fraiche (almost tastes like sour cream) to go with the banana tarte tatin, which I made - what seems like weeks ago!! But I never ended up feeling there was any need for the creme fraiche, seeing as the tarte tatin almost disappeared before my very eyes. So I was left with creme fraiche which will be going off in the next few days...and I have not had time to bake something like a tart, which would go nicely with the creme fraiche. For this reason, I looked up a quick and easy recipe, something that sounds quick, appealing AND uses up my creme fraiche...so here it is :)

Pakoras

I had never heard of chick pea flour until coming across the recipe for pakoras. Chick pea flour is also known as gram flour, or besan flour. I bought it from my local supermarket and couldn't wait to give these a try :)

Rice with marinated chicken

This dish I was making up as I go along, so for the ingredients I will try my best to approximate the quantity used, because not everything I measured to the exact amount.

Swiss roll with strawberry jam filling

I have been meaning to make a swiss roll for sooo long, so today I finally went out and bought a tin with high edges (otherwise known as swiss roll tin)...but I still managed to buy the wrong size tin (bought it too big)..but that didn't stop me from making my first ever swiss roll :)

Fluffy layered cream cake

I really don't have a name for this cake, hence the title :)

To make this cake I used the recipe from the 'fluffy cake' post:

http://www.nosaibasfood.com/2012/09/fluffy-cake.html

However, I didn't add the topping used for the above fluffy cake and DECREASED the orange and lemon rind to literally half or one orange and lemon. Also, I divided the cake mixture into two 18 cm cake tins, grease the tins and line with greased baking paper. Once done, remove and leave to cool.

Banoffee pie

Still have some bananas to use, and I have always wanted to make banoffee pie, so here it goes :)

Tuesday, 4 December 2012

Banana tarte tatin

Had a few bananas starting to go old, you know when the skin starts turning black and the banana is no longer appealing (not to me anyway)...so I thought let me make something useful with these banana's, and voila, a banana tarte tatin was made :)

Chocolate cupcakes

Who else cannot resist the sound of chocolate cupcakes....I had to give these a go...

Sunday, 25 November 2012

Pear and almond cake

As you may have noticed by now, I really do love pears, especially when baking. So here is a yummy pear and almond cake :)

Friday, 23 November 2012

White chocolate mint cupcakes

Mint? White chocolate? Cup cakes? Yes? In that case, these are going to come down as a treat :)

Sunday, 18 November 2012

Chocolate victoria sandwich

This is a spongy, soft, tasty chocolate cake, which is quick and easy to make, and most importantly - a yummy treat :)

Thursday, 15 November 2012

Marble loaf cake

If you do not have a loaf tin, no need to panic :) just place it into a small cake tin...and you will be fine!

Easy peasy apple crumble

I know it hasn't been long since I made the apple and banana crumble, but a good friend requested apple crumble, its its pure form :) So here is a very easy apple crumble recipe, fit for a 10 year old to make....or...maybe not!

Wednesday, 7 November 2012

Chicken maqlooba (upside down rice)

Maqlooba is the arabic word for upside down :) The reason you will soon find out...
A lot of frying goes on in this recipe, so have to admit, isn't the healthiest of meals, but it sure is tasty!!

Blueberry and lemon muffins

Some things just attract your attention, they sound good, they look good...and ultimately, they taste good! That is the case with blueberry muffins, except this recipe has an added twist, something I really like, lemon!

Sunday, 4 November 2012

Cranberry brioche

This recipe is not for the faint hearted, lol. Its not difficult in the sense you have to stand long hours making it, but it has some technical aspects that are not simple, and it also requires a lot of patience (you will see what I mean below). For this reason, I will introduce alongside the prep time and baking time what I believe is the skill level of the recipe, for your guidance.

Saturday, 3 November 2012

Chicken kabsa

I have tried making kabsa before, so I kept and removed ingredients that worked/did not work. For example, a previous kabsa I have made required orange rind, which I did not like in the kabsa. Please let me know if this recipe is authentic enough, or if there are any changes I should make.

Friday, 2 November 2012

Apple turnovers

The sound of apples, cinnamon  and puff pastry is very appealing, so apple turnovers was definitely something I wanted to try out.

Wednesday, 31 October 2012

Apple and banana crumble

Apples and bananas were starting to go old, so the dessert that came to mind to use up these fruits was an apple and banana crumble.

Monday, 29 October 2012

Marshmallow cupcakes

Who doesn't love marshmallows? Please come forward!!! When I saw marshmallow cupcakes, I just had to give this recipe a try!

Saturday, 27 October 2012

Vanilla cream cupcakes

After being gifted a load of baking and cupcake books/equipment this eid, I could not help but try out this simply appealing cupcake recipe. One reason I thought I would give it a go is the ingredients are standard, something you probably will already have at home. Another reason I decided to make these is to try out my new piping set (first time I ever pipe!!)

Pistachio & walnut maamoul

So Eid is upon us all, may you and your families have a wonderful Eid, full of happiness and blessings from Allah.

One of the known arabic sweets made for Eid is maamoul. I was a bit reluctant to give these a go as they are known to be quite difficult and time consuming...but what is Eid + a food blog without Nosaiba challenging herself to make something special :)

So here is my first ever attempt to make maamoul on my own. I hope you enjoy your Eid, alongside your special Eid sweets, whatever they may be, and most importantly enjoy this recipe (and hopefully making it too) :D

Fruit plait

As you are all well aware, I am no fabulous baker, but I do enjoy the process. This recipe is something I used to make when I was at high school, and it would turn out lovely! So I dug out the recipe (not literally), and here's my 'grown up' attempt at this amazing dessert, no pressure on me to ensure it turns out good!!

Carrot cake

I just loveeeee carrot cake, so was really looking forward to sharing this recipe with all of you. The measurements for the cake recipe are in cups, instead of grams. If you don't have the standard measuring cup, use your tea/coffee mug instead :)

Tuesday, 16 October 2012

Pear, cardamom & sultana cake

I personally love pears, especially in cake, they go all soft and oh so yummy. :) So this recipe really caught my attention and I thought I would give it a go to see how it turns out...so here it is! :)

Monday, 15 October 2012

Banana, date & walnut loaf

If you like banana's, dates and walnuts, then you're going to love this recipe! Simple ingredients, easy steps...only thing you might not have is the loaf tin! (I personally thought I had one...but ended up buying one especially for this recipe! Dedication I tell you!) :)

Thank you :)

I want to take this opportunity, seeing as this blog has now hit 1000 views, to say alhamdulilah, and a big thank you to everyone who has viewed this blog, commented, tried out the recipes, shared the blog with others and been a form of encouragement :)

So long as good comes from this blog, inshAllah it will continue.

Please let me know if you have any requests for food you have always loved/wanted to try (but bare in mind I am no chef, so keep the skill to 'Nosaiba level') :)

Thank you all once again,

Nosaiba :)

Chocolate & vanilla cake

Out of mere fun (yes I find baking fun), I thought I would try out this recipe for a chocolate and vanilla cake. It actually was more simple than I thought it would be, and it tastes delicious!

Lahme bi ajeen (meat in pastry) - bitesize

This appetiser can be called different names, some may call it lahme bi ajeen, others would call it sfeeha...but I have stuck to lahme bi ajeen only because my grandma (may Allah rest her soul) used to make it specifically for us, and thats what she called them.

Lamingtons

I know it seems I pick the most random recipes to try out, but these looked good, and the recipe appeared (at the time) straight forward. The only thing required in this recipe is PATIENCE :) as you will have to bake the cake and leave over-night...so no getting tempted to taste it or forget that you were supposed to make lamingtons and instead eat it in the morning with a cup of tea! :)

Saturday, 6 October 2012

Chicken Pulao

After a request to try this out, I went on the hunt to find a recipe that is clear...and in in english!! Recipe was found, but a few on the ingredients I had never heard of, so I added what I could and chicken pulao became Nosaiba style (probably very unauthentic!)

Tuesday, 2 October 2012

Thai green chicken curry

This was made as a pair, for a cook off competition with friends. Alhamdulilah it turned out successful, so I thought I would share it for anyone interested in giving it a go :)

Raspberry & coconut friands

Never heard of friands until today! But I sure am glad I gave them a go, because they taste...well, I will leave the final verdict up to you! But let me put it this way, if they weren't so amazing I wouldn't have put them up for you to try :)

Sunday, 30 September 2012

Fluffy cake

What makes this cake so good is that its steps are simple, the ingredients you probably already have, and it comes out nice and fluffy, also tasting so good :)

Lebanese chicken soup

This is my all time favourite soup, no other soup has managed to take its number 1 spot! I have sent the recipe for this soup to many people, who requested it after tasting it, so I thought might as well post it up for everyone to try out. Unfortunately the internet isn't advanced enough for me to place a taster on the blog for you to try out before attempting the recipe! :)
