Baamya (okra sauce)

One of my favourite dishes is baamya. I love the okra and the tangy flavour!! I did not want to put this up, because I did not make this on my own like I normally do when I upload recipes, but my mum insisted I did because she said I was doing the main part, she was just assisting. Nonetheless, now we all can do this recipe on our own for next time, to enjoy this amazing meal inshAllah :)

Red lentil soup

We call this Libyan soup at home, mainly because my mum got this recipe off her Libyan friend, lol. So I thought maybe it is best I stick with red lentil soup as a name instead, as it may have a special name for Libyan's which we do not know about.

Fried chicken in breadcrumbs

There is a variety of ways to make fried chicken, usually using eggs. But I do not use eggs, instead I use milk to act as the binding agent. It isn't difficult, maybe just a little fiddly with the hands, but I will try my best to explain below. Please note you can vary the measurements according to your needs. You may be shocked by the spices I add to the flour, but I tend to just add a little of everything just for the fun of it :)

I have tried to make pancakes once before, and it didn't turn out as good as I wanted, so I did not post up the recipe. Although I failed on my first attempt, I was still keen to find a recipe that actually works...and guess what, this pancake recipe is just soo yummy! (Lesson to myself: never quit, if you want to make good pancakes, you have to persevere and you will get there in the end! lol) <-- great moral! is the recipe, I hope you try it out, play around with the toppings, and let me know if you have an even better recipe..

Pizza in a Pitta

This may not be an actual recipe, but it is a lovely treat to have from time to time. I love it, so I thought I would share it with you. There are no specific measurements (I will put approximations below), as you can add as much or as little as you want...and you can vary it according to how you like it. I will put the basic pizza in a pitta sandwich below, and then I will put the extras you can add if you wanted.

Aubergine & courgette pasta

I wanted to use up the aubergine and courgettes we had in the fridge, something quick, simple and to be honest...I just wanted an excuse to cook. Of course making pasta is not rocket science, so here is an aubergine and courgette pasta I made up as I went along...therefore quantities are not exact and you can vary them according to what you have at hand.

Butternut squash snack

I bought butternut squash - with the aim of cooking something with it. I just never got round to doing so, and the label said use within 10 days...and to be honest, I think I had gone beyond I thought why not un-complicate things and do something super super simple, made up from a simple brain like mine :) 

This will probably not qualify as a recipe, but I thought why not share it, maybe one day you might fancy snacking on this too :)

Chocolate mousse using creme fraiche

I had bought creme fraiche (almost tastes like sour cream) to go with the banana tarte tatin, which I made - what seems like weeks ago!! But I never ended up feeling there was any need for the creme fraiche, seeing as the tarte tatin almost disappeared before my very eyes. So I was left with creme fraiche which will be going off in the next few days...and I have not had time to bake something like a tart, which would go nicely with the creme fraiche. For this reason, I looked up a quick and easy recipe, something that sounds quick, appealing AND uses up my creme here it is :)

I had never heard of chick pea flour until coming across the recipe for pakoras. Chick pea flour is also known as gram flour, or besan flour. I bought it from my local supermarket and couldn't wait to give these a try :)

I have been meaning to make a swiss roll for sooo long, so today I finally went out and bought a tin with high edges (otherwise known as swiss roll tin)...but I still managed to buy the wrong size tin (bought it too big)..but that didn't stop me from making my first ever swiss roll :)

Fluffy layered cream cake

I really don't have a name for this cake, hence the title :) 

To make this cake I used the recipe from the 'fluffy cake' post:

However, I didn't add the topping used for the above fluffy cake and DECREASED the orange and lemon rind to literally half or one orange and lemon. Also, I divided the cake mixture into two 18 cm cake tins, grease the tins and line with greased baking paper. Once done, remove and leave to cool.

Cranberry brioche

Chicken kabsa

I have tried making kabsa before, so I kept and removed ingredients that worked/did not work. For example, a previous kabsa I have made required orange rind, which I did not like in the kabsa. Please let me know if this recipe is authentic enough, or if there are any changes I should make.

Pistachio & walnut maamoul

So Eid is upon us all, may you and your families have a wonderful Eid, full of happiness and blessings from Allah. 

One of the known arabic sweets made for Eid is maamoul. I was a bit reluctant to give these a go as they are known to be quite difficult and time consuming...but what is Eid + a food blog without Nosaiba challenging herself to make something special :)

Chocolate & vanilla cake

Out of mere fun (yes I find baking fun), I thought I would try out this recipe for a chocolate and vanilla cake. It actually was more simple than I thought it would be, and it tastes delicious!

Lahme bi ajeen (meat in pastry) - bitesize

This appetiser can be called different names, some may call it lahme bi ajeen, others would call it sfeeha...but I have stuck to lahme bi ajeen only because my grandma (may Allah rest her soul) used to make it specifically for us, and thats what she called them.

I know it seems I pick the most random recipes to try out, but these looked good, and the recipe appeared (at the time) straight forward. The only thing required in this recipe is PATIENCE :) as you will have to bake the cake and leave no getting tempted to taste it or forget that you were supposed to make lamingtons and instead eat it in the morning with a cup of tea! :)
