Lebanese chicken soup

This is my all time favourite soup, no other soup has managed to take its number 1 spot! I have sent the recipe for this soup to many people, who requested it after tasting it, so I thought might as well post it up for everyone to try out. Unfortunately the internet isn't advanced enough for me to place a taster on the blog for you to try out before attempting the recipe! :)

The thing with this recipe is when I make it I do not add any specific amounts, so I had to think of the amounts, tested it out for you guys, and here they are below: 

Serves: 6-7 people
Time: 40 mins

What you will need

1 chicken breast
3 cups of boiling water (initially, add more later)
5 cardamom pods
1 tsp black peppercorns
3 bay leaves
1 cinnamon stick
1 tsp salt
1 tsp cinnamon
1/2 tsp black pepper
3 tbsp tomato puree
1 chicken stock cube
1/4 cup rice, washed and drained
A handful of freshly chopped parsley

Directions to make
1) Place the chicken in a pot. Add boiling water on top, as well as the cardamom pods, peppercorns, bay leaves and cinnamon stick. Leave to boil for 15-20 mins until cooked 2) Remove the chicken from the water, set aside. Remove the cardamom pods, the bay leaves and cinnamon stick and discard. Add to the chicken water the salt, cinnamon, black pepper, tomato puree and chicken stock cube to the same pot 3) Allow to boil for a few minutes before adding the rice 4) Shred the chicken and add it into the pot to absorb all the flavours. Whilst the soup boils mix every now and then so that the rice does not stick together 5) Add extra boiling water in intervals of half a cup every 5 mins if needed 6) After approximately 15-20 minutes, see if the rice has softened. If it hasn't then leave to boil for longer 7) Once the rice has cooked, check if the soup needs more water (it may have dried up over the boiling process), if so just add more water until you feel it is a good amount (i.e. looks like soup and not tomato rice) 6) Check for seasoning, you may want to add some more salt or tomato puree (depending on how much extra water has been added) 7) Add your parsley, let it boil with your soup for one minute before turning off the heat and leaving it to sit for 5 mins or until ready to serve 8) Once you are ready to serve, mix the soup, turn the heat back on (if it has been a while) and add boiled water in half cup intervals until you are happy with the soup-yness of the soup :) If it is all up to scratch then the soup is ready to go :)
