Banana, date & walnut loaf

If you like banana's, dates and walnuts, then you're going to love this recipe! Simple ingredients, easy steps...only thing you might not have is the loaf tin! (I personally thought I had one...but ended up buying one especially for this recipe! Dedication I tell you!) :)



  • Prep time: 15 minutes
  • Cooking time: approx 1 hour 10 minutes

What you will need

400g bananas (weighed with skins on)
1 tbsp lemon juice
300g self raising flour
1 tsp baking powder
125g caster sugar
125g butter, melted
2 eggs, beaten
175g chopped dates
50g walnut pieces
Optional: walnut halves and banana chips for decoration

Directions to make

1) Peel and mash the bananas with the lemon juice

2) Place the flour, baking powder and sugar in a mixing bowl. Add the mashed bananas, melted butter and eggs and mix well

3) Stir in the dates and walnut pieces, then spoon into a greased 1kg loaf tin (its base and two long sides also lined with oiled greaseproof paper). Spread the surface level and decorate with the optional walnuts and banana chips

4) Place into the oven, on 160 degreed Celsius  gas mark 3, for 1 hour 10 minutes or until well risen and an inserted skewer comes out clean. Leave to cool for 10 minutes, then turn onto a wire rack and peel off the lining paper. Leave to cool completely before enjoying!


This was actually delicious I tell you, and perfect with a cup of tea! Enjoyyy :)
