Chocolate & vanilla cake

Out of mere fun (yes I find baking fun), I thought I would try out this recipe for a chocolate and vanilla cake. It actually was more simple than I thought it would be, and it tastes delicious!

  • Prep time: 25-30 minutes
  • Cooking time: 20 minutes

What you will need

For the cake:

175g soft margarine (I did not have this, and i really wanted to bake, so i substituted for half a cup of vegetable oil)
175g caster sugar
175g self raising flour
1 tsp baking powder
3 eggs
1/2 tsp vanilla extract (I added this in myself, because I didn't want an eggy taste to the cake)

For the filling:

150ml double cream, whipped
1 tsp vanilla extract

Directions to make

1) Beat all the ingredients for the cake in a mixing bowl

2) Grease and line with baking paper two 18cm sandwich tins, and spread the surfaces level (I don't have 18cm tins so I used the closest ones which were 20cm)

3) Bake in the oven at 200 degrees Celsius (gas mark 4), for 20 minutes, or until well risen and springs back to the touch

4) Leave to cool in the tin for 5 minutes, before loosening the edges and removing the paper, turning both cakes onto a wire rack to cool

5) Place the whipped cream on one of the cakes, and place the other cake on top. Dust the top of the cake lightly with icing sugar

It is as easy as that :) So quick, simple and tasty! Enjoy :)
