Banana tarte tatin

Had a few bananas starting to go old, you know when the skin starts turning black and the banana is no longer appealing (not to me anyway)...so I thought let me make something useful with these banana's, and voila, a banana tarte tatin was made :)



  • Skill level: Easy/medium (caramel bit is only tricky part)
  • Serves: 7-8 people
  • Prep time: 15 mins
  • Baking time: 25 mins
What you will need:

60g unsalted butter
150g caster sugar
3-4 large bananas
1 teaspoon cinnamon
1/2 rind of orange
250g puff pastry ready rolled (or cube and roll it out yourself)

How to make:

1) Cut your butter into small pieces and place onto an approximately 19 x 30cm deep-sided baking dish

2) Place the baking dish with the butter over a low heat, and allow the butter to melt

3) Add the sugar and stir continuously until the sugar dissolved, then cook for a further 5 minutes or until all the sugar dissolves and the mixture begins to turn golden and caramalised (the mixture will be very hot so be careful)

4) In the meantime peel the bananas and slice. Lay these over the caramel once its done

5) Remove the baking tray off the heat, sprinkle the cinnamon and orange zest over the bananas

6) Carefully place the puff pastry over the baking tray, tucking in the pastry around the edges to ensure all bananas are covered

7) Prick the pastry a few times with a knife and place in the oven at 180 degrees Celsius for 25-30 minutes

8) When removing from oven, get a knife and slide round the edges to loosen any pastry stuck to the baking tray. Turn onto the serving dish whilst still hot, and serve with ice cream or creme freche if desired
