Banoffee pie

Still have some bananas to use, and I have always wanted to make banoffee pie, so here it goes :)

  • Skill level: easy
  • Serves: 8ish people
  • Prep time: 1 hour 15 mins (including time to chill)
  • Baking time: 10 mins
What you will need:

300g biscuits (I recommend oaty ones, like Hob Nobs)
60g butter, melted
1 can (397g) Caramel (I bought the Nestle Carnation one)
3 large bananas, peeled and sliced
1 sachet dream topping (will require 150ml milk) (or use double cream and whip)
Grated chocolate for topping

How to make:

1) Crush the biscuits in a food processor, then add the melted butter and pulse until combined

2) Press the biscuit mixture into a 24cm tart tin with a removable base (I only had a 19cm tin, so I made two pies, the second one having less of everything!), and make an even layer

3) Place the tin on a baking sheet and cook for 10-12 mins, until lightly roasted and set

4) Leave to cool, then gently release from the tin and place the base on a serving plate

5) Spread the caramel over the biscuit base and leave in the fridge to chill for 1 hour

6) Meanwhile, make the cream by measuring 150ml of milk and 1 sachet of dream topping powder, whisking until cream consistency. Place in the fridge until ready to use

7) Arrange the banana slices over the toffee, then decorate with the whipped cream and chocolate

Just the bananas

Plus cream

Plus chocolate :)

Plus close up
This was a definite treat, not difficult to make yet looks and tastes great. Enjoy :)
