Chicken & broccoli pasta with bechamel sauce

I have made this before, and for days I have been wanting to make it...because I find it sooo tasty and yummy and easy and just....ok, I will calm down and share the recipe :)

  • Skill level: Not rocket science
  • Serves: 7-9 people
  • Prep time: 45 mins
  • Cooking time: 30 mins
What you will need:

500g pasta (I used the bow shaped ones)
Boiling water
splash of olive oil
1 tsp salt
1 broccoli, cut into florets
7 tbsp olive oil
7 tbsp butter (sounds a lot but it will be needed compared to flour added later)
4 onions, peeled and sliced
2 boneless chicken breast, sliced
10 mushrooms, sliced
1 green pepper, sliced
1 red pepper, sliced
1 cup plain flour
7 cups of milk
1 tbsp salt
1/2 tbsp black pepper
1/2 tbsp mixed herb
1 tsp oregano
2 cups mozarella cheese, grated
1 cup cheddar cheese, grated

How to make:

1) Put the pasta in a pot, and cover with enough boiling water and an inch or two more. Add olive oil and salt to the pasta and leave to simmer on medium heat for 10 mins. In the last minute, add the broccoli, then drain

2) Melt the butter with the oil in a pot on medium heat, then add the onions until translucent in colour

3) Add the chicken and cook until the colour changes

4) Add the mushrooms and peppers to the chicken mixture, then add the flour and mix well to coat well

5) Then add the milk, salt, pepper, mixed herb and oregano and continue mixing until the mixture thickens up a little - maybe 10-15 mins on medium heat

6) Place the pasta into an oven dish, and pour the mixture on top. Put the grated cheese over the pasta and place at 180 degrees Celsius for 30 mins or until golden from the top

This is an easy meal, which tastes absolutely fabulous. You really need to try this and experience the yumminess, lol. Enjoyyyy :)
