Fluffy layered cream cake

I really don't have a name for this cake, hence the title :) 

To make this cake I used the recipe from the 'fluffy cake' post:

However, I didn't add the topping used for the above fluffy cake and DECREASED the orange and lemon rind to literally half or one orange and lemon. Also, I divided the cake mixture into two 18 cm cake tins, grease the tins and line with greased baking paper. Once done, remove and leave to cool. 




So below is how to make the frosting (used for the filling and for the decoration of the top layer):

What you will need:

100g unsalted butter cream, softened
200g icing sugar
2 tsp vanilla extract
seedless raspberry jam for the filling
Optional: strawberries to decorate

How to make:

1) Beat the butter, icing sugar and vanilla together until smooth

2) Spread just under a half in the middle of the two cakes, then place the jam over the cream

3) Decorate the top layer of the cake with the remaining cream, making designs as you wish, and placing the strawberries if you wish to add a little wow factor, lol



I didn't get a chance to take a picture of a cut slice, because this was served to guests, and by the time I finished cutting everyone a piece the remaining slice was too thin and not as elegant as one wishes :)

Do give this cake a go, and enjoy decorating it...because I sure did :)
