Orange & sultana cake

I actually wasn't planning on making anything today, but funnily enough, the family requested it. So here is a simple yet tasty orange and sultana cake :)



  • Skill level: Easy
  • Serves: 6ish people
  • Prep time: 5 mins
  • Baking time: 35 minutes
What you will need:

225g soft margarine
225g caster sugar
275g self raising flour, sifted
2 tsp baking powder
4 eggs
2 tbsp milk
275g sultanas
2 orange rind
demerara sugar for the topping (or alternatively an orange icing made from 225g icing sugar sifted with 3 tbsp orange juice - I went for the demerara sugar)

How to make:

1) Grease and add baking paper to a 30 x 23 cm roasting tin and set aside

2) Place all the ingredients EXCEPT the demerara sugar into a bowl, and whisk for about 2 minutes or until well blended. Transfer the mixture into the prepared tin and level the top

3) Bake at 180 degrees Celsius for about 25 mins, the sprinkle the top with the demerara sugar and return to the oven for a further 10-15 mins. Remove from the oven and leave to cool in the tin before serving




I cannot begin to explain just how soft and lovely this cake is. It is not too sweet, nor too orangey...it is just perrrrrrfect :) It would go lovely with a nice cup of tea! What makes it amazing too, is the fact its sooooo quick and easy to make! You saw the recipe yourself, in no time you end up with a lovely cake! Will definately want to make this cake again inshAllah. 

Tip for next time: mix sultanas in a little of the flour first before adding to the batter, this helps the sultanas spread evenly in the cake mix and not drop to the bottom of the cake. Enjoy :)
