Pancakes

I have tried to make pancakes once before, and it didn't turn out as good as I wanted, so I did not post up the recipe. Although I failed on my first attempt, I was still keen to find a recipe that actually works...and guess what, this pancake recipe is just soo yummy! (Lesson to myself: never quit, if you want to make good pancakes, you have to persevere and you will get there in the end! lol) <-- great moral! Soo...here is the recipe, I hope you try it out, play around with the toppings, and let me know if you have an even better recipe..




  • Skill level: Easy
  • Makes: 7-8 small pancakes
  • Prep time: 5 mins
  • Cooking time: 3-4 mins per pancake
What you will need:

120g plain flour, sifted
1 + 1/2 tsp baking powder, sifted
55g caster sugar
pinch of salt
1 egg
1 tsp vanilla extract
130 ml milk
25g unsalted butter, melted (+ extra for cooking)

Optional: sultanas, choco chips, banana pieces

Toppings: honey, maple syrup, chocolate spread, chocolate syrup...anything really (well not anything)  

How to make:

1) In a bowl, put the flour and baking powder, followed by sugar and salt and stir

2) Make a well in the centre and add the egg, vanilla extract and milk and whisk until combined

3) Pour the melted butter slowly whilst whisking, then stir the batter until smooth

4) Melt a little butter on the pan whilst on high heat, then turn the heat down to medium and pour half a ladle of batter. Cook for 1-2 mins or until bubbles rise, as shown below. Then flip to other side for another 1-2 mins


5) You could add sultanas, choco chips etc to your pancakes, you would do this as soon as you pour your batter onto the pan, place them on top of the pancake 

6) Remove and serve hot with a topping of your choice - or plain :)

Alhamdulilah, I am so happy these pancakes were delicious...will just use this recipe for future pancakes. Not difficult at all to make, and they turn out soft and yummy. Enjoy :)
