Pizza in a Pitta

This may not be an actual recipe, but it is a lovely treat to have from time to time. I love it, so I thought I would share it with you. There are no specific measurements (I will put approximations below), as you can add as much or as little as you want...and you can vary it according to how you like it. I will put the basic pizza in a pitta sandwich below, and then I will put the extras you can add if you wanted.



  • Skill level: easy
  • Serves: 1 person
  • Prep time: less than 5 mins
  • Cooking time: less than 5 mins
What you will need:

1 pitta bread
2 tbsp tomato puree 
1 handful cheddar cheese
1 handful sweetcorn
sprinkle of thyme (zaatar)

Extras: onions, mushrooms, different types of cheese

How to make:

1) Open up the pitta bread from one side, spread the tomato puree on  both sides of the bread

2) Sprinkle the cheese on one side, the sweetcorn and thyme and close the sandwich

3) Place on a grill for about 5 minutes, or until the cheese has melted
