Victoria sandwich cake

I wanted to make something that would please all, as sometimes people don't like certain things in their desserts...so what is better as a neutral cake than a victoria sandwich cake?



  • Skill level: easy
  • Serves: 7-8 people
  • Prep time: 5 mins
  • Baking time: 25 minutes
What you will need:

For the sponge

225g soft margarine
225g caster sugar
4 eggs
225g self-raising flour, sifted
2 tsp baking powder
1 tsp vanilla extract

For the filling and topping

4 tbsp strawberry jam (I used a strawberry and vanilla jam)
a little caster sugar

How to make:

1) Grease and place baking paper on two 20cm sandwich tins and set aside

2) Place all the ingredients for the sponge and whisk until well blended. Divide the mixture equally between the tins and level out

3) Bake at 180 degrees Celsius for 25mins or until well risen and tester comes out clean. Leave to cool in the tins for a few minutes before turning onto a wire rack, removing the paper and leaving to cool completely

4) Once completely cold, sandwich together with jam and sprinkle on top the caster sugar for serving

This is a good old traditional cake, simple and tasty, spongy and soft, and should be a dessert that pleases all - even those fussy eaters! Enjoy :)
