Jammie dodgers

A very cute and amazing friend gifted me smiley cookie cutters, so I thought why not make some jammie dodgers - a lovely buttery biscuit that you place jam inside. I also added nutella to some of them instead.

Lamb nihari

I was so excited to have two days off for christmas and boxing day, so I asked what you suggest/request me to make. One of the suggestions was the Pakistani nihari, which I found very appealing - mainly because I love trying out dishes I have never heard of from different parts of the world - and now is the perfect time to challenge oneself.

The recipe is not difficult but is timely. It took just over 4 hours from start to finish! But the end result is worth the effort! I have left in some ingredients below in case you have them on hand, but have written if I omitted or replaced with something. Also, my family are not big fans of ghee, and for this reason I excluded it completely and only used oil.

Waraq inab bi zayt (vine leaves in olive oil)

For anyone who has tasted this home made, I do not need to begin to explain how delicious it is!!! Honestly I could live off this dish, lol, literally! It isn't super hard, or super easy. The ingredients are simple, yet all it requires is a technique...which I have tried my best to explain and show. I am not a professional at rolling these vine leaves, but I find it very therapeutic and enjoyable.

Adas mtabal (green lentil breakfast)

For many, the sound of lentils at breakfast may be a little bit weird, but this is a nutricious Lebanese breakfast, which is guaranteed to keep you full for long. It is super delicious and quick to make. If you have already cooked a big batch of green lentils, you can place handfuls in containers/food bags and store them in the fridge/freezer, ready for use when needed. If you do this, making adas mtabal is super super quick.

So you can always be imaginative and creative, and end up with a delicious meal inshAllah :) (although using ready made breadcrumbs meant the final look wasn't as professional looking)

I've been meaning to upload a recipe for humus a long time ago, as it is so easy and a lovely dip to make. You will realise it tastes better than the ones from the shop. For extra yumminess, use chickpeas that you have soaked over night (I used canned here to make it easier).

Vegetarian samosas

I have made samosas before, but usually I make them in filo pastry, so this time I wanted to make the dough - and although you would think samosas are a long winded process, this isn't actually that difficult.

I have tried to show pictures step by step when making the actual samosas, although I apologise if they are not that clear, it was not easy taking a picture in one hand and trying to hold the samosa in the other... :)

Masala gosht (spicy lamb curry)

The full name of this Bengali dish is slightly inappropriate for arabic speakers, as the word has a rude meaning lol. So I skipped that word and kept it as masala gosht :) 

The recipe I found for this was quite vague, so I improvised whilst cooking the curry. A tip told to me by a friend, for next time's curry, is to add the water to the meat, remove a small amount of this to mix it in with the yoghurt, then put that back into the pot. This avoids the yoghurt curdling (although the end taste is the same). So I will use this tip inshAllah for next time, and I will write it like that in the instructions below (although I added the yoghurt at once).
