Bite size meringues

I have wanted to make meringues for Allah knows how long!!! So finally made them today, and ohhh was I glad I did...

  • Skill level: Easy-ish
  • Makes: Around 25-30 small meringues
  • Prep time: 15 mins
  • Baking time: 1 hr 15 mins 
What you will need:

4 egg whites
225g caster sugar
1 tsp vanilla extract
Optional: dessicated coconut to decorate

How to make:

1) Using an electric whisk, whisk the egg whites until soft peaks form (this will take at least 3 minutes + )

2) Add the sugar teaspoon at a time, continuously whisking on high speed until all the sugar is added, then add the vanilla extract and whisk for a few minutes. You should have shiny mixture with soft peaks

3) Place mixture into a piping bag, and pipe onto a baking sheet small 'blobs', a few cm apart. Sprinkle with coconut if you like, and place into the oven at 130 degrees Celsius for 1 hour and 15 mins. Then switch off the oven and leave the door open until the meringues cool

I will tell you one thing, I lost count for how many I ate!!! They are deeeeliiiicccciiiiiooooussss, and not hard to make!!! If you gave them a go, you will not regret inshAllah! Enjoy :)
