Oreo no-bake cheesecake

I have always wanted to make an oreo cake, but the other day a dear friend requested oreo I thought yey - why not? Been wanting to make an oreo cake, so a cheesecake will do. I searched high and low for a good oreo cheesecake recipe, something that didn't require difficult ingredients, and at the same time I wanted it to be a no bake cheesecake - so voila, I finally found the recipe, and here it is with my adjustments:

  • Serves: 7-8 people
  • Prep time: 15 mins
  • Chilling time: 1 hour +
What you will need:

200g chocolate digestive biscuits
50g unsalted butter, melted
2 packs Oreos (original) + extra to decorate
500g cream cheese (I used Philadelphia)
500g mascarpone cheese
100g caster sugar

How to make:

1) Using a pestle (or any other crushing object you have), crush the biscuits into fine crumbs, then add the melted butter to them and mix well

2) Place cling film on the base of a spring-form cake tin, then gently press the biscuit base on the base of the tin. Place in the freezer to set whilst making the cream cheese mixture

3) Crush the oreos but not too fine, so that chunks remain - then set aside

4) Using an electric whisk, cream together the cream cheese, mascarpone and sugar. Then gently fold in, using a spoon, the oreo mixture, a bit at a time until all incorporated

5) Spoon the mixture over the biscuit base, smoothening out the surface, then place in the fridge for at least an hour to chill

6) Once ready to serve, loosen the edges of the tin with a knife, then remove the cheesecake carefully. Decorate the top with oreos and serve :)

For my second try of this cheesecake, I would decrease the amount of philadelphia cheese, and a little of the sugar...and see what happens. This is a really reach oreo cheesecake - hope you enjoy :)

UPDATE: I would not change anything in this cheesecake, it tastes even more amazing the following day! So I would keep all the measurements the same, except instead of 1 hour in the fridge, I would leave it overnight and serve it the following day.
