Fajitas with a yummy side salsa

We usually just buy the sachet fajita spice mixture, which you mix in with the veges and chicken to make fajitas, but I wanted to make it without this sachet. This was by far tastier, and the salsa that goes with it is absolutely delicious! Perfect combo!

Easy chocolate pudding

If you want something tasty, yet you want it quick, then this easy chocolate pudding is a definite yes! It is really simple, requires a few minutes of mixing, and then you're done. Whats good is that it can be served warm or chilled. It's almost like chocolate custard, so you can be adventurous with this recipe and add to it as you wish (a layer of digestive biscuits when plating up could be a good idea)

Chilli con carne

I have never actually tried chilli con carne, but I have heard it tastes lovely. I bought a can of kidney beans to make a different meal, but decided to try out a chilli con carne instead :)

Lebanese treeda - تريدة الكوسا

In order not to waste the cores of the koosa (white courgettes) from either the ablama or koosa dishes:

Koosa mihshi كوسة محشي

This is a typical middle eastern meal, tasty and not super super difficult. It was actually quite therapeutic making it :) It uses koosa, which is white courgettes, stuffed with rice and minced meat, cooked in tomato sauce..

Ruz ib-haleeb (Lebanese rice pudding)

This is the lebanese version of a rice pudding. I am not sure in what way it differs from rice puddings made elsewhere. Nonetheless, I make this in loving memory of my dear grandma, who would make this for us with a loving caring heart. May Allah rest her dear soul.

Middle Eastern salad

I get told I make good salad, so I thought I would share how I make it. I never measure out the dressing, but I tried to do it this time to give you a rough guide. You can add/remove as you wish, but I have given you what I usually add..

Fool - فول

I know the name may sound rude, honestly I am not calling food a 'fool', that is the actual name :) It is traditionally an Egyptian breakfast, but is now made as a traditional breakfast in many arab countries. The way it is made will vary, but below I have shown you how we make it in our family :)

Shepherds pie

This take on shepherds pie is an Irish classic. Thought I should keep the variety in recipes, and shepherds pie is known to be a yummy dish. If you use lamb meat, it is called shepherds pie...and if you use beef, it is called a cottage pie :)

Chocolate palmiers

Also known as elephant ears :) To be honest, I wasn't familiar with the name until now. This recipe is super super EASY!! I could have made the puff pastry myself, but when I saw it at the shop, it called to me to buy it instead...thus making this recipe super simple!!

Nutella cupcakes

So if you live under a rock, you may have not heard of Nutella. This is a hazelnut chocolate spread which is simply delicious! So anything made from nutella is bound to be scrummy...hence why I chose to make nutella cupcakes :)
