Ablama (stuffed white courgettes)

Ablama is a lebanese dish, which uses koosa (light green/white courgette), stuffed with minced meat, in a tangy sauce....ooooh just delicious mashAllah :D




  • Skill level: Medium
  • Serves: 4-5 people
  • Prep time: 1 1/2 - 2 hours
  • Cooking time: 20-25 mins
What you will need:

15-20 small koosa (depending on how many you wish to feed)
vegetable oil for frying
300g minced meat
handful of pine nuts
1 tsp salt
1/2 tsp black pepper
1/2 tsp cinnamon
juice of 1 medium lemon
2 tbsp pomegranate syrup
1 tsp salt
1/2 tsp black pepper
1/2 tsp cinnamon
1 + 1/2 cups hot water

How to make:

1) Cut off the top part and slightly off the bottom of the koosa, to clean it, then rinse in water. Hollow out each koosa, ensuring you do this gently to ensure the koosa does to break (keep the insides of the koosa for a different dish - called treedi). Place the hollowed koosa in a large bowl of water

2) Deep fry the koosa in hot vegetable oil until dark brown, then remove and drain on kitchen towel

3) Meanwhile, cook the minced meat and pine nuts until the meat browns, then add the salt, black pepper and cinnamon, and mix well. Set aside to cool

4) Once the koosa is cool enough to handle, place the minced meat into each, filling it as much as possible, then align them into a oven proof deep dish

5) Mix the lemon juice, pomegranate syrup, salt, black pepper, cinnamon and hot water until well mixed, then pour this over the aligned koosa. Add any excess minced meat to the liquid and mix well. Taste to adjust as you like (if you like it more tangy, add more pomegranate, or add more water to decrease the tanginess)

6) Place in the oven at 200 degrees Celsius, for between 20-25 mins, until the liquid boils. Serve with white rice
