Grilled spicy chicken nugget salad

We all know chicken nuggets are delicious, and kids love them too! This is a healthy spin on chicken nuggets, its grilled, full of flavour, and made into a salad to bulk it up and fill you up. The salad part I have already uploaded a recipe for, so this is mainly how to make the chicken nuggets...



  • Skill level: Easy
  • Serves: 3-4 people
  • Prep and cooking time: 20 mins max
What you will need:


For the chicken nuggets

1/4 cup milk
1 tsp tandoori powder
1/2 cup breadcrumbs
1 tsp tandoori powder
1 tsp paprika
2 boneless chicken, cut into cubes


For the salad

Half the quantity of the salad from:

Add to this 1 pitta bread toasted and broken into pieces

How to make:

1) Mix the milk with with the tandoori powder in a small bowl, then in a separate bowl mix the breadcrumbs with the tandoori and paprika

2) Take each chicken cube, dip it in the milk, then coat it in the breadcrumbs. Place on a hot grill to cook, flipping it after around 5 mins

3) Meanwhile, prepare the salad by mixing all the ingredients for the salad, including the pitta bread

4) Once the chicken is done, mix it in with the salad, and place some on the top




This is so filling, yet so healthy and quick to make. Enjoy every mouth full, guilt free! :)

    Q: Can you use an alternative to milk? can u make a big batch and freeze/ refrigerate these? It would be great if you could let me know.

    1. Some use egg as the agent to help the crumbs stick...but i prefer milk as it ensures no eggy taste....yes of course u can fridge/freeze. I hope u try and enjoy it
