Middle Eastern salad

I get told I make good salad, so I thought I would share how I make it. I never measure out the dressing, but I tried to do it this time to give you a rough guide. You can add/remove as you wish, but I have given you what I usually add..



  • Skill level: Easy
  • Serves: 7ish people
  • Prep time: 15-20 mins
What you will need:

2 tomatoes, chopped
4 inches of cucumber (approx amount), chopped
1 bell pepper, de-seeded and chopped
1 veryyy small onion, peeled and very finely chopped
handful of parsley, finely chopped
1 iceberg lettuce, chopped
3/4 tbsp salt
10 tbsp olive oil
10 tbsp cider vinegar

Optional: lemon, mint, olives etc

What I don't like to add: sweetcorn, carrots..

How to make:

1) Place all the chopped ingredients above into a serving bowl, then just before you serve (max 5 minutes), add the salt, olive oil and vinegar, and mix well

2) Check taste, and adjust the dressing accordingly



There is room to vary this greatly, but this is just rough guidance to make a juicy, vibrant, refreshing salad! Enjoy :)
