Almond cupcakes with almond frosting

I don't know why I thought of making almond cupcakes, but I was about to go to sleep one night, and different flavour cupcakes was going through my mind. When I thought of almond cupcakes, it sounded like a good idea - so here I am making them lol

  • Makes: 12-14 cupcakes
  • Prep time: 10-15 mins
  • Baking time: 20 mins
What you will need:

For the almond cupcakes

140g self raising flour, sifted
100g ground almond
1/2 tsp baking powder
175g caster sugar
3 eggs
1/2 tsp almond extract
100g plain yoghurt
175g unsalted butter, melted

For the almond frosting

300g icing sugar, sifted
50g unsalted butter, at room temperature
120g cream cheese, cold from fridge
1 tsp vanilla extract
1 tsp almond extract

How to make:

1) Place the flour, ground almond, baking powder and sugar in a bowl, and mix to combine

2) In a separate small bowl, add the eggs, almond extract and plain yoghurt, and mix together. Then add these to the dry ingredients, alongside the melted butter, then whisk until combined

3) Spoon the mixture into cupcake cases in a cupcake tin, and place in the oven on 180 degrees Celsius for 20 mins, or until the skewer comes out clean - then place on a wire rack to cool completely

4) Meanwhile, make the frosting by whisking together the icing sugar and butter until combined. Add the cream cheese, vanilla extract and almond extract and whisk for a further 5 mins, until light and fluffy - then decorate the cooled cupcakes

This tastes lovely, especially if you are a fan of almonds. The taste reminds me slightly of marzipan - because of the almond. Hope you give it a go. Enjoy :)
