Brie and cranberry rolls

I had phyllo pastry remaining from yesterdays baklawa recipe, and I also had bought brie cheese a while back, which was going to go off, so this is how brie and cranberry rolls came in existence... :)



  • Skill level: super easy
  • Serves: 4+
  • Prep time: 10 mins
  • Cooking time: 15 mins
What you will need:

30g butter, melted
10 phyllo pastry sheets
1 x 200g brie cheese, cut into small chunks
90g cranberries

How to make:

1) Brush the melted butter over the pastry (either cut the sheet in half or use it all - depending on how big you want the rolls), then place a few chunks of brie cheese and a few cranberries

2) Roll into a springroll shape, by folding the edges diagonally, then rolling it up

3) Place onto a greased baking pan, and heat on 200 degrees Celsius for 15 mins, or until golden





It really is super simple, and a nice side treat. Enjoy :)
