Moist yellow decorated cake

I wanted to make a welcome back cake, but really wanted to have a super delicious cake. This cake has a sweetness to it, and at the same time is not too crumbly, making it easy to decorate.

Humus

I've been meaning to upload a recipe for humus a long time ago, as it is so easy and a lovely dip to make. You will realise it tastes better than the ones from the shop. For extra yumminess, use chickpeas that you have soaked over night (I used canned here to make it easier).

Sweet saffron rice

This is a lovely, fragrant rice, which is more of a dessert really. I liked the sound of it, so gave it a go...

Cold tuna pasta

With the sun out (no, don't say horray!!), I thought a cold tuna pasta would go nicely. Unfortunately I did not have all the ingredients I would have ideally liked to add (and I ran out of mayonnaise lol), so I have wrote down what I added, and what I would have liked to add.

Chicken marengo (French chicken stew)

This is a popular French dish which usually uses wine (typical!). However, I have replaced that with chicken stock. I have to tell you, this tasted delicious mashAllah - full of flavour and the chicken was so moist!

Ruz bil shi'riya (Rice with vermicelli)

This is so easy, but gives a lovely addition to normal plain rice. I have never uploaded a plain rice recipe as I thought it may be too simple, but rice with vermicelli got requested, so here it goes..

Chicken dhansak (spicy chicken & lentil stew)

On my mission to explore different foods, I came across this dish which is popular in India and Pakistan. The ingredients used are ones you will easily have on hand, as I like to make sure the recipe's are easy to make for all. I hope it does the dish justice :)

Lemon lentil rice

If you are looking to prepare a meal quickly, or you wish to have a vegetarian option, then this South Indian dish is really perfect.

Cheese, caramelised onion & potato pasty

Do you like how I used 'caramelised' onions, to make it sound all fancy hehe :) It is simply a cheese and onion pasty, and I can tell you one thing, well two things - one being this is so simple to make, and two this was absolutely DELICIOUS mashAllah - forget shop bought ones...it tasted wayyy better!!!

Aubergine lasagna

We had a few aubergines in the fridge, so I thought why not make a lasagna with them. A lovely vegetarian dish (in case anyone was interested), and not difficult at all.

Vegetarian samosas

I have made samosas before, but usually I make them in filo pastry, so this time I wanted to make the dough - and although you would think samosas are a long winded process, this isn't actually that difficult.

I have tried to show pictures step by step when making the actual samosas, although I apologise if they are not that clear, it was not easy taking a picture in one hand and trying to hold the samosa in the other... :)

Lemon drizzle cake

This was a recipe request, and seeing as I love lemon in cakes, I couldn't wait to make it :)

Masala gosht (spicy lamb curry)

The full name of this Bengali dish is slightly inappropriate for arabic speakers, as the word has a rude meaning lol. So I skipped that word and kept it as masala gosht :)

The recipe I found for this was quite vague, so I improvised whilst cooking the curry. A tip told to me by a friend, for next time's curry, is to add the water to the meat, remove a small amount of this to mix it in with the yoghurt, then put that back into the pot. This avoids the yoghurt curdling (although the end taste is the same). So I will use this tip inshAllah for next time, and I will write it like that in the instructions below (although I added the yoghurt at once).

Japanese cheesecake

My friend was eating a shop bought Japanese cheesecake, so she sent a picture of her slice and challenged me to make it. Of course, me being the silly person I am accepted this challenge. Recipe seemed long winded, but turned out even more long winded on the day. So I have tried to write how you can avoid this below:

Grilled bbq boneless chicken

If you are after a quick meal, with stuff you already have on hand, then this is great! For the bbq sauce I added whatever I fancied, so feel free to add/remove as you like (and adjust to taste)

Stuffed mushrooms

If you want to make a quick, easy meal, and you like mushrooms - then this is perfect! Quick, tasty, easy and meat free (if that is important to you).

Chocolate & vanilla fudge

I had evaporated milk left over from the 'gypsy tart' I made the other day, so I wanted to use it up and make something yummy. This was originally going to be a vanilla fudge, but I decided last minute to throw in some chocolate and see how it turns out :D

Raisin rice

I absolutely love raisins on top of my rice, so I thought why not make rice with raisins inside of it too! This is sooo easy, it will be ready in 20 mins.

Gypsy tart

My mum referred to this as the rude dessert, lol. She didn't want to say its name as a joke :D

This tart is known to be tricky to perfect, as people complain it either splits and curdles, or does not set. But where is the fun if you do not challenge yourself from time to time, eh? So I did a lot of searching and said bismillah...

Chocolate & orange cake

I was flicking through an old recipe book, and the thought of chocolate with orange sounded very appealing. So I gave it a go and the result was indeed worthwhile. If you like terry's chocolate, then you will love this cake!

Baba ghanoush (aubergine dip)

This is a very easy and delicious side dish, made across the Middle East. It is absolutely delicious, especially if you love aubergines (which I do). I in no way wish to sound stuck up, but this baba ghanoush was the best I have ever tasted, so do feel free to give it a go.

Kafta (Lebanese kebab)

Kebabs are well known, and loved by many. Kafta is very similar, and you can make it in different ways according to what dish you want to make. In this recipe it is made to look like kebabs, but there are also other ways to serve the kafta, like layering it with potatoes, tomatoes etc. In this recipe the easy way of making kafta is shown, and what you wish to serve it with is left to your liking.
