Chicken marengo (French chicken stew)

This is a popular French dish which usually uses wine (typical!). However, I have replaced that with chicken stock. I have to tell you, this tasted delicious mashAllah - full of flavour and the chicken was so moist!

  • Cooking time: 20 mins
What you will need:

4 bonesless chicken breast, cut into cubes (I used 1 boneless chicken, and 1 whole chicken cut to eight pieces - as this is what I had in the freezer)
1/2 cup plain flour
1 tsp salt
1/2 tsp black pepper
3 tbsp vegetable oil
2 medium onions, peeled and sliced
250g mushrooms, sliced
1 bell pepper, cut into strips
2 garlic cloves, peeled and crushed
3 tbsp tomato puree
250ml (1 cup) chicken stock
1 x 400g chopped tomato can
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp mixed herb
1 bay leaf

How to make:

1) Prepare the chicken, then place the flour, salt and black pepper in a food bag, and place the chicken in the bag and coat the chicken with the flour

2) Meanwhile, heat the oil in a pot, then add the chicken pieces over medium heat, and brown on each side (roughly 5 mins each), then remove and set aside

3) In the same pot (add more oil if necessary), place the onions, mushroom, bell pepper and garlic, and mix until softened (if a lot of liquid present at this point, add a tablespoon of the flour and mix to thicken it up)

4) Add the tomato puree and mix for another minute or so, before adding the chicken stock and increasing the heat to high for 2 mins

5) Reduce the heat, to medium low, add the chopped tomato, salt, black pepper, mixed herb and bay leaf. Once the mixture starts to bubble, add the chicken pieces, cover the pot, and leave to simmer gently for 15-20 mins (until the chicken is cooked and tender)

A different plate, at the dinner table 
This can be served with pasta, rice, bread - whatever you like. I was in two minds whether to make spaghetti or rice - so I went with rice. The pictures do no justice to the taste of this dish, I didn't get a chance to make the plate look pretty as we just wanted to eat!! Enjoy :)
