Lemon lentil rice

If you are looking to prepare a meal quickly, or you wish to have a vegetarian option, then this South Indian dish is really perfect.

  • Skill level: Easy
  • Serves: 4-5 people
  • Prep time: 30 mins
  • Cooking time: 20 mins
What you will need:

3 tbsp red lentil (masoor dal)
1 cup rice
1 tbsp olive oil
1 + 3/4 cup boiling water
1/2 tsp salt
2 tbsp vegetable oil
1/4 cup unsalted peanuts
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1 whole red chilli
1 green chilli, sliced long ways into four pieces (I left this out)
15 curry leaves (I did not have this so replaced it with 1/2 tsp curry powder)
1/2 tsp turmeric
1 tsp salt
Juice of 1 lemon

How to make:

1) Wash the red lentils, then drain, and re-wash a few times. Then leave to soak in water for 30 mins

2) Meanwhile, do the same with the rice (wash and drain a few times), then leave to soak in the water for 15 mins

3) Drain out the water of the rice, place it in a pot with the olive oil, water and salt. Bring to a boil, then reduce the heat, cover with a lid and leave to cook for 15 mins

4) In the meantime, heat the vegetable oil in a pan over medium heat and roast the peanuts until golden brown, then remove onto kitchen paper and set aside

5) In the same oil, add the cumin and mustard seeds, once they start to crack, add the chilli and curry leaves and stir for a few seconds

6) Drain the lentils and add them to the pan, stirring for a minute, then add the turmeric and combine

7) Add the cooked rice into the pan, followed by salt and lemon juice, then mix gently to avoid breaking the rice. Stir fry for 2 minutes then serve
