Raisin rice

I absolutely love raisins on top of my rice, so I thought why not make rice with raisins inside of it too! This is sooo easy, it will be ready in 20 mins.



  • Skill level: Easy
  • Serves: 4-5 people
  • Prep time: 2 mins
  • Cooking time: 20 mins
What you will need:

1 cup basmati rice
1 + 1/2 cup boiling water
1/4 cup raisins (+ extra for topping)
1/2 tbsp salt
3/4 tbsp cinnamon
pinch of saffron
splash of olive oil

How to make:

1) Wash and drain, then re-wash and drain the rice a couple of times, until the water is no longer cloudy. Place into a non-stick medium/large pot

2) Add the boiling water over the rice, as well as the raisins, salt, cinnamon, saffron and olive oil, mix well 

3) Bring the mixture to a boil, then reduce the heat to low, cover and leave for 15-20 mins (at 15 mins uncover and check the rice using a fork, if it needs longer then leave it another 5 mins). Once cooked turn off the heat, place a kitchen towel on the pot then cover, and leave for 5 mins before serving. Top with extra raisins if you wish





 




I served this with yoghurt and sweet chilli sauce. A salad would also go very well. Super simple, it was done in no time, and a great dinner for any raisin lover! Enjoy :)
