Ruz bil shi'riya (Rice with vermicelli)

This is so easy, but gives a lovely addition to normal plain rice. I have never uploaded a plain rice recipe as I thought it may be too simple, but rice with vermicelli got requested, so here it goes..

  • Skill level: Easy
  • Serves: 5-6 people
  • Prep time: 15 mins (for rice to soak)
  • Cooking time: 15 mins

What you will need:

1 cup rice (I use basmati)
1 tbsp vegetable oil
2 handfuls vermicelli
1 + 3/4 cup boiling water
1 tsp salt
Optional: paprika powder to decorate

How to make:

1) Rinse and drain, then re-rinse the rice a few times until the water is no longer cloudy. Then soak in water for at least 15 mins (if you are in a rush use rice straight away, but the longer it is soaked the fluffier it will be)

2) In a pan, heat the oil, then break the vermicelli into small pieces and place over the oil. Keep stirring to avoid burning the vermicelli. Once a light brown colour has been achieved, place the vermicelli into a medium sized pot

3) Drain the rice and add it over the vermicelli in the pot, then add the boiling water and salt. Bring to the boil over medium heat, then reduce the heat, cover the pot and leave to cook for around 15 mins. Check if the rice is cooked by using a fork to fluff the rice, if it needs more leave it for a few minutes. When the rice is done, turn off the heat, use a towel or kitchen paper to place it over the pot then cover with the lid and leave to sit for a minute 

4) Place the rice on a serving dish, and decorate with paprika powder if you wish

This goes with any sauce you like. I made it with yesterdays chicken dhansak. It really is a basic recipe which makes white rice tastier and prettier. Enjoy :)
