Stuffed mushrooms

If you want to make a quick, easy meal, and you like mushrooms - then this is perfect! Quick, tasty, easy and meat free (if that is important to you).



  • Skill level: Easy
  • Serves: 4-6 people
  • Prep time: 5 mins
  • Cooking time: 15 mins
What you will need:

8 jumbo mushrooms
200g cream cheese (I used philadelphia)
handful cheddar cheese
1 garlic clove, minced
2 tbsp tomato puree
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/4 tsp hot chilli powder
golden breadcrumbs for the topping

How to make:

1) Brush the skin of the mushrooms to clean any dirt (if you wish to wash them, ensure they are thoroughly dry before using) then place open side up on a foiled oven tray

2) Mix together the cream cheese, cheddar cheese, garlic, tomato puree, salt, black pepper, cayenne, chilli powder together in a small bowl, then spoon onto the mushroom and top with breadcrumbs

3) Place on 250 degrees Celsius for 15 mins until roasted





Delicious, full of flavour and just so quick and easy to prepare. I served this with oven chips and boiled broccoli :) Enjoy!
