Beef stir fry

Out of all things to eat on the weekend, I really felt like noodles! Seeing as I have already made chicken noodles: I decided to make beef noodles, or a beef stir fry...

  • Skill level: Easy
  • Serves: 5-6 people
  • Prep time: 5 mins
  • Cooking time: 15 mins

What you will need:

2 tbsp vegetable oil
400g cubed beef, cut into strips
2 tsp salt
1/2 tsp black pepper
3 onions, peeled and cut into strips
2 garlic cloves, peeled and crushed
1 small piece of ginger, peeled and finely chopped
1 courgette, halved and cut into strips
1 red pepper, cut into strips
2 x 450g egg noodles
4-5 tbsp soy sauce

How to make:

1) Heat the oil in a pot, then over high heat add the meat, turning it so that it does not stick. Cook until the meat has browned, and the liquid that it produces has thickened, add the salt and black pepper and mix well - then remove and set aside

2) In the same pot, reduce the heat to medium, then add the onions, garlic and ginger, and mix until the onions start to become translucent in colour. Add the courgette and red pepper and mix until cooked 

3) Add in the egg noodles (check package incase they need to be cooked pre-hand), add the soy sauce and check for seasoning (add more salt, pepper accordingly). Mix well and serve
