Bazaala (pea stew)

This is a delicious Lebanese dish, not difficult to make, but so delicious! If you are a fan of peas, then this one is for you!

  • Skill level: Easy
  • Serves: 6-8 people
  • Prep time: 10 mins
  • Cooking time: 35-45 mins
What you will need:

1 tbsp olive oil
350g meat cubes
1 tbsp salt
1 tbsp cinnamon powder
1/4 tbsp black pepper
6-8 carrots, peeled and cut into small cubes
1 bulb garlic, minced
1/4 bunch of coriander, chopped
200g tomato puree
1 + 1/2 cup boiling water (or as needed)
1 chicken stock cube
800g frozen peas

How to make:

1) Heat the olive oil in a pot, then add the meat cubes and cover. Leave on medium heat until the meat changes colour, and the liquid that it releases begins to dry up (around 10 mins or so)

2) Add the salt, cinnamon and black pepper and mix well. Then add the chopped carrots, mix and cook for a further 5 mins

3) Add the garlic and coriander, and leave on the heat for a further 5-10 mins for the garlic to begin to cook

4) Add the tomato puree, boiling water and chicken stock cube. Mix, cover and leave for 10 mins or until the carrot is beginning to soften

5) Add the peas and mix well, cover and leave for a further 10-15 mins, or until the peas are soft (try not to mush the peas when mixing, remain gentle). If you feel the mixture is too dry, add more water

Serve with white rice, and you will see just how delicious and easy this is. Enjoy!
