Chocolate gooey cookies

I reallllly missed the kitchen! So although I was tired, I wanted to make something...anything! I wanted something easy, yet tasty. These chocolatey cookies are justtttt yummy! You won't regret trying them inshAllah!

  • Skill level: Easy
  • Makes: 12ish cookies
  • Prep time: 2 hours - 3 days (depends how long you wish to refrigerate them)
  • Baking time: 11-12 mins
What you will need:

280g plain flour
1 tsp baking powder
1 + 1/2 tsp corn starch
1/2 tsp salt
170g unsalted butter, melted
150g light brown sugar
100g granulated sugar
1 egg + 1 egg yolk
2 tsp vanilla extract
180g chocolate chips or chocolate chunks (+ extra for topping if you wish)

How to make:

1) In a bowl, add the flour, baking powder, corn starch and salt. Mix and set aside

2) In a different bowl, whisk together the melted butter, brown sugar and white sugar until no lumps remain

3) Add the egg and continue whisking, then add the vanilla extract and whisk till smooth

4) Place the wet mixture into the dry mixture, and mix using a wooden spoon or spatula

5) Add the chocolate chips and try to evenly distribute them. Cover the bowl and place in the fridge for ideally 2 hours at minimum, or up to 3 days! (As usual, I took a short cut because I had no time, so I left the mixture in the freezer for 40 mins)

6) Remove from the fridge and leave for 10 mins at room temperature. Set out baking trays with parchment paper or silicon, and using your hands, roll around 3 tbsp of the mixture to form a ball. Make a tower instead of an actual ball, as this will ensure the cookies turn out thick. Place the extra chocolate pieces if you wish (I had ran out of chocolate), and cook at 170 degrees Celsius for 11-12 mins

7) The secret to chewy cookies is for them to be slightly undercooked, as when you remove them at 11-12 mins, leave them on the tray for a further 10 mins, whereby they continue to cook, then transfer them onto a wire rack to cool completely

Absolutely deliciously tasty! Felt like the cookie monster whilst eating these! Well worth the short time spent making them! Enjoy :)

  1. Assalaamu alaikum, what do you mean when you wrote, make them into a tower instead of a ball shape? How do we make it into a tower?

    1. Wa alaikum alsalam. Instead of rolling the cookie dough as balls - roll them into cylinder shapes. That way when u place them on the baking sheet they will look like towers. This isnt compulsory, it just helps form a thicker cookie. Hope that helps :)
