Honey bbq chicken over saffron rice

I misssss cooking, I really do! Being back in the kitchen was wonderful! I was super excited to be able to make something after a few weeks of no cooking! So I came up with this dish, and alhamdulilah it turned out delicious. Nothing complicated and minimal effort needed :D

What you will need:

For the honey bbq chicken

5 tbsp bbq sauce
3 tbsp ketchup
3 tbsp honey
2 tbsp soy sauce
2 tbsp olive oil
1 tbsp cider vinegar
1 tbsp sweet chilli sauce
3 boneless chicken breast, cut into cubes

For the saffron rice

2 + 1/2 cups basmati rice
2 tbsp olive oil
3 small onions, peeled and finely chopped
3 garlic cloves, peeled and minced
1 + 1/4 tbsp salt
1/2 tbsp cinnamon
1/4 tbsp black pepper
1 chicken stock cube, crumbled
1 large pinch saffron
3 + 3/4 cup boiling water

1 tbsp vegetable oil
125g x cashew nuts

How to make:

1) Add all the ingredients for the honey bbq chicken into a bowl, along with the chicken, and set aside to marinate

2) Meanwhile, rinse the rice under warm water until the water is no longer cloudy, then fill up with warm water and set aside

3) In a deep pot, heat the olive oil under medium heat, and add the onions and garlic. Cook until the colour of the onions change

4) Add the salt, cinnamon, black pepper and chicken stock cube to the onions and garlic, and mix until well combined. Leave to cook for a few more minutes whilst mixing

5) Place the saffron threads in a cup, and add boiling water over it and set aside for a few minutes, then place it in the pot with the onions and garlic. Add more cups of boiling water to reach the stated amount, and leave until the water starts to boil

6) Cover the pot, reduce the heat and leave for 15 mins before checking on it to see if its cooked

7) 5 minutes before the rice is due to finish, heat a griddle on very high heat. Once the griddle is hot, place the marinated chicken with the marinate (if the marinate is too much, keep some aside). Keep the chicken over a high heat and continuously mix. Once the marinate thickens and the chicken cooks, remove off the heat

8) Once the time is up for the rice, fluff using a fork to see if it is done. If the rice has cooked, turn off the heat and cover the rice for a further 5 minutes

9) Place the rice onto the serving dish, then add the chicken over it. If you wish to add nuts, heat the oil in a pan then cook the nuts mixing constantly to avoid them burning. Add them over the chicken and rice

You can serve this with salad, yoghurt or on its own. The family loved the dish alhamdulilah, and
