One pot chicken tagine

I love tagine, and seeing as I have already made one with lamb which was delicious (http://www.nosaibasfood.com/2013/11/lamb-tagine.html), I thought why not make something similar. I was looking for a filling yet healthy-ish meal...I think this did just the trick :)
My sister bought me a tagine, which I could have used to make this, but I wanted to make it in a pot to make it easy for anyone to make, even without the tagine.

The ingredients used to make such meatballs are not your standard ingredients, I have added what I think would make a delicious meatball. Juicy beef burger

There is nothing like a home made juicy beef burger...and my father, the biggest food critic, said 'Nosaiba, these are better than the ones we buy'. Obviously this made me super happy, as a compliment about food from theee dad is indeed a great achievement! Lol. Funny thing is, I kind of added whatever I thought would go well in a burger mix, to make a really juicy flavoursome beef burger.

Saag aloo (spinach and potato)

I have a patient who mentioned their favourite thing to order from the indian restaurant was saag aloo. So off Nosaiba went to hunt down what this dish was, and she realised it sounds delicious and so easy! So here is one of the ways to make saag aloo, some also add onions or extra spices. I found this version so delicious mashAllah and it took minimal effort to make! I adjusted the recipe in a way I thought would enhance the flavours even more.

Samosas filled with a minced meat mixture

It has been a while since I uploaded a recipe, and I have to put my hands up and plead guilty! I am sorry, no excuses, other than its been a very busy couple of weekends, and although I have cooked a few things, I just haven't had the chance to upload them. 

So, to try and make up for it, here is a recipe for some delicious minced meat samosas. I have been using this filling since wayyyy back, and mashAllah the family love it. It isn't difficult to make at all, and you can pack them nicely and keep them in the freezer for future frying (or baking if you so wish).

Easy and healthy penne pasta

I got a request to make something 'student' friendly, someone who is on a budget and has no time to spare in the kitchen...so nothing too fancy or expensive. So I thought why not make an easy yet at the same time healthy penne pasta. This recipe contains no salt, no oil, no cheese - no nothing naughty...only easy delicious ingredients, which you can feel free to add or remove anything that you wish. Soft white cake, with strawberries and cream

It was a little difficult coming up with a name for this cake. The main aspect of it is the soft texture of the cake, the fact you do not use baking powder and rely on mixing the egg whites until they form soft peaks...similar to what you would do when making a meringue. So maybe this can be called a meringue cake, hmm... whatever you want to call it, it is a delicious cake to make... and you have the option to put whatever you like in it and over it :D

Honey & pomegranate glazed lamb chops with sweet potato mash

I have no idea why I felt like making honey glazed lamb chops, so I went out and got the chops, as well as the accompanying sweet potato and vegetables. The glaze is both sweet yet tangy, resulting in a juicy lamb chop, full of flavour. I added chilli powder to the sauce to give it that extra kick. I love sweet potato, so i figured having it as a side mash would go well. Therefore I have added the directions for making both the lamb chops and the sweet potato.

Maftoul (Palastinian couscous) with chicken and chickpea broth

My sister had seen a packet of maftoul in the shop, bought it and left it on my desk with a note saying: 'I challenge you to make a delicious dish with this ingredient'. I smiled at seeing this, and couldn't wait to fulfil this challenge! So here it is, a delicious dish which uses maftoul, a larger version of couscous.

Olive oil sponge cake

The idea of an olive oil cake raised eyebrows amongst my sisters, but the end result proved to be delicious! You can't actually taste the olive oil, it just acts as a substitute for butter/vegetable oil. This sponge cake is so easy to make, and in my mind, is quite healthy! The good thing about this cake is it acts as a base for lots of recipes, and even you can be creative in what you wish to serve it with...custard, ice cream, whipped cream, a fruit compote....or simply with a warm cup of tea :)

Greek Pastitsio (layered pasta with meat and bechamel topping)

I love pasta and bechamel sauce, so this really appealed to me. It is almost like a lasagne - but in a different sort of way. It tasted absolutely delicious mashAllah!!! I really recommend this to everyone! Ingredients are easy to find and the process is not difficult.

Sweet yet tangy tomato sauce with chicken

This is an easy and super delicious dish I made using ingredients I already have in the kitchen. I kind of gave it a Moroccan twist by adding raisins (because I love raisins and thought it would go well with this dish) and sugar to give it that sweetness, yet pomegranate syrup to give that tangy kick. Just the smell from this dish made my dad come to the kitchen to 'taste test' it :D

I have been meaning to make a Turkish dish for a long time, and finally I managed to make it today on my day off (alhamdulilah for new years holiday). This dish is so easy to make, and so full of flavour and yumminess, maybe the fact that I love aubergines has an affect! It is a popular Ottoman dish, and I can understand why its a favourite amongst the Turkish people.
