Spinach and ricotta cannelloni

I keep getting told I always write 'the recipe is easy to make', so this time I am not going to say it is easy! :) This recipe is delicious, yet requires a little of skill when piping the mixture into the cannelloni, so there we go, this recipe isn't super easy...but it is worth it :)



  • Skill level: Easy/medium
  • Serves: 5ish people
  • Preparation time: 45-50 mins
  • Cooking time: 35-40 mins
What you will need:

400g fresh spinach
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 medium onion, peeled and diced
3 gloves garlic, peeled and minced
2 x 400g tins of chopped tomato
1 bay leaf
1 handful of freshly picked basil leaves
zest of one small lemon
1 tsp salt
1/2 tsp pepper
250g ricotta
1 egg
1 tsp salt
200g cannelloni (about 17 tubes)
1 x 115g mozzarella ball, sliced
drizzle of olive oil
pinch of salt and black pepper

How to make:

1) In large pot, at the spinach, olive oil, salt and pepper. Cover and leave over a low heat, stirring occasionally until the spinach has cooked down. Transfer the wilted spinach with the liquid into a bowl and set aside

2) In the same pot, heat the olive oil, add the onions and cook till soft. Add the garlic, tomatoes, bay leaf, a few basil leaves (saving the rest for later) and lemon zest. Leave to simmer over low heat for 20 mins, until the sauce has thickened. Season with salt and pepper

3) Squeeze the moisture out of the spinach just to roughly chop them, then place them back into the bowl with their liquid. Stir in the ricotta and egg, then add salt

4) Place the spinach mixture into a piping bag, then pipe into the cannelloni tubes, then laying them into an oven dish. Spread the tomato sauce over the cannelloni. Scatter the remaining basil leaves, lay the mozzarella slices and drizzle over some olive oil and a pinch of salt and black pepper

5) Place in a pre-heated 180 degrees Celsius oven for 35-40 mins (if the top starts to brown too fast, cover with foil)





I got carried away chatting to my sister and left it in oven for longer



A lovely dish to make, and so delicious to eat! Enjoy :)

  1. Looks absolutely delicious. I've made this before with a creamy sauce but never a tomato sauce. Will definitely give it a go. :)
