Fresh sheet lasagna

This is like making lasagna using the dry pasta sheets, yet using fresh ones gives an even better taste (or so I think so). Lasagna is one of my favourite pasta dishes, so I enjoyed making this and of course, eating it too :D




  • Skill level: Easy
  • Serves: 6-8 people
  • Preparation time: 20-30 mins
  • Cooking time: 20 mins
What you will need:

1 tbsp olive oil
3 medium onions, peeled and diced
6 garlic cloves, peeled and minced
1 inch ginger, peeled and finely chopped
1/2 kg beef mince
1 tbsp salt
1/2 tbsp black pepper
1/2 tbsp cinnamon
1/2 tbsp garam masala
1/2 tbsp paprika
1/4 tbsp chilli powder
100g mushrooms, chopped
1 bell pepper, de-seeded and chopped
1 x 200g tomato puree
1 x 400g tinned chopped tomato
1 x 400g can sweetcorn
1/2 tbsp dried oregano
1/2 tbsp dried mint
1/2 tbsp dried basil
1/2 tbsp mixed herbs
1 chicken stock cube
1 tsp pomegranate sauce
2 tbsp cream cheese (optional)
handful of fresh basil leaves, chopped (and whole ones left for decorating)
8-9 fresh lasagna sheets (I used one and a half 225g packets)
Mozzarella cheese
Cheddar cheese

How to make:

1) Heat the olive oil in a pot, add the onions, garlic and ginger. Leave until they cook (they will change colour). Add the minced meat, and continue over medium heat until the meat has dried and cooked

2) Add the salt, black pepper, cinnamon, garam masala, paprika and chilli powder and mix well. Leave for a further minute before adding the mushrooms and bell pepper, mixing well into the mixture before adding the tomato puree and mixing well

3) Add the chopped tomato, sweetcorn, oregano, mint, basil, mixed herbs, chicken stock cube and pomegranate sauce. Mix well and leave on the heat to boil for at least 10 mins. Taste and adjust accordingly

4) Add the cream cheese if you wish, with the fresh basil leaves. Leave for a further few minutes

5) Using a deep oven dish, add a little of the tomato sauce to the base of the dish, then add a layer of the lasagna sheets. Follow on by adding a layer of tomato sauce, adding some mozarella and cheddar cheese before adding the next layer of lasagna sheets. Repeat until the final layer, whereby you end it with tomato sauce and more cheese. Add basil leaves as a design on top if you wish, and place into a hot oven on 210 degrees Celsius for 15-20 mins or until the top layer has gone nice and golden

You can add white sauce to this if you wish, but this is lovely and easy as it is! So delicious mashAllah, enjoy! :)
