Gnocchi in a creamy tomato sauce

I don't know why I have this habit of strolling randomly down the food aisle at the supermarket, and picking up random things, then working out a dish to make from it. This is exactly what I did with the gnocchi. Alhamdulilah, it turned out delicious!! My sister had her reservations, as she had tasted gnocchi at a Italian place, but when she tasted this dish she found it more delicious than the one she had tasted. This really is worth a try!



  • Skill level: Easy
  • Serves: 6-7 people
  • Prep and cooking time: 30 mins
What you will require:

2 tbsp olive oil
4 garlic cloves, crushed
2 x 400g can chopped tomatoes
1 tsp salt
1/2 tsp black pepper
250g mascarpone cheese
2 x 500g pack gnocchi
300g fresh spinach
handful basil leaves, roughly chopped
optional: handful of grated cheddar cheese

How to make:

1) Heat the olive oil in a pot, then add the garlic until lightly golden. Add the chopped tomatoes, alongside the salt and pepper. Simmer over medium heat for 10mins, stirring occasionally

2) In the meantime, add the gnocchi in boiling water over medium heat. Once the water starts to boil, allow to cook for a few more minutes then drain

3) Once the 10mins are up for the sauce, add the mascarpone cheese and cook for a further 2 minutes. Add the spinach for a further minute, then add the gnocchi and mix well

4) Add the basil leaves and cheese, if you want, when serving
