Almond and cranberry biscotti

My dear sister loves biscotti, well so do I, and I have always wanted to make them..but just never did. Her request was for me to make them, and so I did. I decided to make almond and cranberry biscotti as I thought the two together would be delicious..and alhamdulilah it sure was.

  • Skill level: Easy
  • Serves: Depends how many biscottis each person will have
  • Preparation time: 10-15 mins
  • Baking time: 30-35 mins altogether
What you will need:

100g whole almonds
50g unsalted butter
225g self raising flour + more for dusting
70g dried cranberries
100g caster sugar
2 eggs
1 tsp vanilla extract
Optional: 3/4 tsp almond extract

How to make:

1) Place the whole almonds on a baking sheet and place into a hot oven for 7-10 mins or until lightly roasted. Remove, leave to cool then chop

2) Melt the butter, then set aside to cool

3) In a bowl, sieve the flour, then add the chopped almonds, cranberries and sugar. Mix together with a fork to combine

4) In a separate bowl, mix the eggs, melted butter, vanilla extract and almond extract using a  fork, then slowly add them to the flour mix whilst mixing the mixture with a fork

5) Use your hands to combine the mixture, and add more flour if the mixture is too sticky (I added at least a quarter cup more of flour)

6) Flour a clean surface, and place the mixture on it, dividing the mixture to make two 20cm logs

7) Place onto a baking sheet, and bake the two logs on 180 degrees Celsius for 20minutes

8) Remove and leave to cool for 5minutes before cutting slanted pieces using a serrated knife, place the biscotti pieces back onto the baking sheet, and bake for a further 10minutes, flipping each one on the other side for a further 5minutes

9) Remove onto a wire rack, and leave to cool completely to ensure the biscotti hardens up

This was delicious, and easier to make then you would think. Enjoy with a cup of tea or coffee. Enjoy :)
