Honey glazed spicy chicken burger

When you have chicken breasts in the freezer, and burger buns sitting there waiting to be eaten, why not make a honey glazed spicy chicken burger? It does sound rather odd, honey and spicy...right? Well my experimentation turned out delicious alhamdulilah!

  • Skill level: Easy
  • Serves: 6ish people
  • Preparation time: 5-10 mins
  • Cooking time: 10-ish mins
What you will need:

4 boneless chicken breasts
1 tsp salt
1/2 tsp black pepper
3 tbsp ketchup
3 tbsp hot bbq sauce
2 tbsp sweet chilli sauce
1 tbsp extra hot sauce
2 tbsp soy sauce
1 tbsp yellow mustard
1 tbsp olive oil
1 tbsp cider vinegar
4 tbsp honey
Burger buns as needed

How to make:

1) Prepare the chicken breast by cutting it lengthways in half if the chicken is too thick. Place it, if needed, into a sandwich bag and beat with a rolling pin slightly to thin out the chicken piece

2) Place the chicken pieces into a bowl, add the salt, black pepper, ketchup, bbq sauce, sweet chilli, hot sauce, soy sauce, yellow mustard, olive oil, vinegar and 1 tbsp of the honey. Mix well to ensure the chicken is well coated

3) Heat the remaining 3 tbsp of honey for 20 seconds in the microwave to make it easier to brush over the chicken later - set aside

4) Over a hot griddle, on medium/high heat, place a few pieces of chicken at a time. Cook for around 3-4 minutes on one side before flipping over. Once the chicken has changed colour, and has been cooked both sides, brush over the honey before flipping over one final time. Brush the honey on both sides of the chicken. Remove onto a plate to rest, whilst you cook the rest of the chicken. Serve with the burger buns

You can add whatever you like to a burger, chips, tomatoes, pickles, cheese, veges...and of course, who can forget...ketchup! This recipe is so delicious, yet simple and quick! Enjoy :)
