Chicken and potato - with cashews and raisins.

This was another one of those days whereby I stand at the hob, in front of a pot, and add things not knowing what I will be making for certain. Mid way, after tasting, you can then decide ok - I am making this! I think they turn out to be the tastiest dishes :)

  • Serves: 6-8 people
  • Preparation time: 30 mins
  • Cooking time: 30-40 mins
What you will need:

2 tbsp vegetable oil
4 medium sized potatoes, peeled and cut into bitesize pieces
1 baby chicken, cut into eight pieces
1 chicken breast, cut into cubes
5 onions, peeled and finely chopped
6 garlic cloves, peeled and finely chopped
1 inch ginger, peeled and finely chopped
2 large tomatoes, chopped
1 tbsp salt
1 tbsp ground coriander
1 tbsp mild curry powder
1/4 tbsp turmeric
1/4 tbsp ginger powder
1/4 tbsp black pepper
1/4 tbsp chilli powder
2 tbsp tomato puree
2 handfuls raisins + extra for decorating
2 handfuls roasted cashew nuts + extra for decorating

How to make:

1) Heat the vegetable oil in the pot over medium high heat, then add the potatoes, cooking on either side until the potato lightly browns

2) Add the chicken pieces, until they also gain colour

3) Add the onion, garlic and ginger, mix well. Cover and leave over medium heat for five minutes. Add the tomatoes, salt, ground coriander, curry powder, turmeric, ginger, black pepper, chilli powder and tomato puree, then mix and cover for 10 minutes

4) Check the taste of the mix, and adjust as needed. Add the raisins and cashew nuts and mix. If the potato or mix needs longer, leave on for a further 5-10 minutes, otherwise a few minutes later you are ready to serve

I served with white rice, and although the pictures don't do it justice, this was a big hit with the family. The balance with the sweetness of the raisins makes it just perfect! Enjoy :)
