Mini puff pastry pizza squares

For a cute looking, easy making, delicious tasting side to the dinner table, this is perfect! Simple, so yummy and looks like you put in a lot of effort - when it literally would take you 5 mins to prepare!





The ingredients I used to make the base are obviously variable depending on your choice, you could use just tomato sauce for the base, and the topping you could add whatever you fancy - sweetcorn, olives, chicken etc - the choice is yours. This is just simply what I made.

  • Preparation time: 5 mins
  • Cooking time: 10-15 mins
What you will need:

2 x 320g ready rolled puff pastry
3 tbsp tomato puree
3 tbsp bbq sauce
1/2 tbsp sun dried tomato paste 
1 tbsp sweet chilli sauce
1 small red onion, chopped
1 red bell pepper, de-seeded and chopped
cheddar cheese, shredded
mozzarella cheese, shredded
dried oregano

How to make:

1) Oil the surface, then place the ready rolled puff pastry, and cut each puff pastry into six equal squares, then place them on a baking tray, which you have lined with baking paper and oiled

2) In a small bowl, add the tomato puree, bbq sauce, sun dried tomato paste and sweet chilli sauce and mix together

3) Place in the centre of each square a heaped teaspoon (or more) of the tomato puree mix. Keep the edges free of any tomato base

4) Add over the tomato base the red onion, bell peppers, cheddar cheese, mozzarella cheese and a sprinkle of dried oregano

5) Place in the oven at 220 degrees Celsius for 10-15 minutes, or until they are lightly browned around the edges of the puff pastry squares

They were a great delight, it is like eating a deliciously flaky yummy pizza - in one bite! Enjoy :)
