Caramelised balsamic pasta with spinach

Pasta, in my opinion, is one of the easiest dishes to make - especially when you want something quick, filling and on hand. So today I used whatever ingredients I had on hand, and created a concentrated caramelised onion base - with tomatoes that got a balsamic glaze - and I have to say, this tasted sooo good mashAllah! :)

  • Preparation time: 5-10 mins
  • Cooking time: 20 mins
What you will need:

2 tbsp olive oil
3 onions, peeled and chopped
4 garlic cloves, peeled and finely chopped
3 medium tomatoes, chopped
1/2 tbsp salt
1 + 1/2 tbsp brown sugar
1 + 1/2 balsamic vinegar glaze (or the actual vinegar)
6 medium sized mushrooms, chopped
1 bell pepper, deseeded and chopped
1 red chilli, deseeded and finely chopped
1/2 tbsp paprika
1/4 tsp black pepper
1/4 tsp cinnamon powder
1 x 400g can chickpea
1 x 400g can chopped tomato
4 tbsp tomato puree
1 chicken stock cube
handful of olives, pitted and halved
1 tbsp mixed herb
500g pasta (I used conchiglie pasta)
Boiling water
sprinkle of salt
splash of olive oil
2 large handfuls fresh spinach

How to make:

1) In a pot, heat the olive oil over medium heat. Add the onions and garlic and cook until golden and caramelised (around 5-7 mins)

2) Add the tomatoes, mix well. Add the salt and brown sugar and mix. Add the balsamic vinegar, mix well then cook over medium/high heat until the tomatoes begin to disintegrate (around 4-5 mins) 

3) Add the mushrooms, bell pepper, red chilli and mix well. Add the paprika, black pepper and cinnamon powder and mix well for a few minutes

4) Add the chickpeas, chopped tomato, tomato puree and chicken stock cube. Add the olives and mixed herb then mix well. Leave over medium heat to boil

5) In the meantime, in a different pot, add the pasta, and add enough water to immerse the pasta. Add the salt and olive oil and leave over medium heat to boil for 10 mins (or according to the packet instructions). Once done, drain the water and set aside ready to use

6) Give the tomato sauce a taste to adjust as needed, you may need to add water if the mixture is too dry, you may also need to add more salt, or sugar, or balsamic vinegar. Once you are happy with the taste, add the spinach. Mix well, leave for 5 mins

7) Add the pasta to the tomato sauce, mix gently and well
 







You can really taste the balsamic base to this pasta sauce, and the caramelised onions and garlic take this pasta to another level! Give it a try and enjoy! :)
