Mozzarella filled beef burger with caramelised onions and coleslaw

I have always loved the sound of mozzarella inside my juicy burger...as I am a big cheese fan as it is...so here is the easy recipe, with the additional yummy sides you may wish to make to go with the burger. I also decided to use brioche burger buns to give that added deliciousness...

What you will need

For the mozzarella filled beef burger

1kg minced beef
1 tbsp salt
1/2 tbsp black pepper
1/2 tbsp cinnamon
1/2 tbsp paprika
1/2 tbsp dried chilli flakes
1/4 tbsp burger spices (optional)
2 tbsp bbq sauce
2 tbsp ketchup
2 eggs
2 tbsp breadcrumbs
100g mozzarella, cut into thin square slices
2 tbsp sunflower oil
cheese square slices

For the caramelised onions

2 tbsp sunflower oil
4 onions, peeled and thinly sliced
pinch of salt
1 + 1/2 tbsp brown sugar
1/2 tsp balsamic vinegar

For the coleslaw

1 white cabbage, thinly sliced
salt
3 tbsp mayonaise
3 tbsp ketchup

+ 8 brioche burger buns

How to make:

1) Begin by adding all the ingredients under 'for the mozzarella filled beef burgers' except the mozzarella, sunflower oil and cheese slices. Give the mixture a very good mix until well incorporated

2) Depending on how big you want your burgers (or if you have a burger press it would be even better), place a handful of the meat mixture into your hand and make it a ball shape. Flatten out the mixture to make a patty, then place two mozzarella slices in the middle. Cover the slices using the sides of the patty - placing them over the mozzarella. Flatten out the beef burger. Do this for the rest of the mixture then set aside

3) To make the caramelised onions, heat the oil in a pan. Add the onions and salt, and mix over medium high heat until the onions change colour. Add the brown sugar and balsamic vinegar, and cook until the onion become caramelised (around 5-8 mins). Set aside

4) To make the coleslaw, add the cabbage in a large bowl, sprinkle salt over the cabbage and rub well into the cabbage (exact amount isn't necessary as it will get washed away anyway). Leave for around 15 mins or until the coleslaw softens a little

5) Rinse the coleslaw under cold water, then drain off the water and ensure you squeeze out any excess water from the cabbage. Add the mayonnaise and ketchup. Taste and adjust accordingly

6) To cook the beef burgers, heat up the sunflower oil in a pan over medium heat. Add the burgers enough to fit the pan. Cook for a few minutes, then flip to the other side. Once you are happy with how well cooked the burger is (depends on how you like your meat done), add a cheese slice in the final minute before removing the burger. Set aside on a plate to rest until ready to serve

7) In the meantime, slice open the burger buns, and heat in the oven for a few minutes to warm up. Assemble your burger, adding tomatoes, onions, ketchup, pickles, chips or whatever you fancy, then serve

It was a big hit, my family absolutely loved it. The melted mozzarella centre bursts out when you take a bite, and the caramelised onions are just amaaaazing!!! Enjoy! :)
