Grilled lemon and garlic Mediterranean chicken salad

This is another recipe that I made for the catering event - and I have to tell you, the flavour on the chicken alongside the dressing on the salad lifts this to another level. It is something you can prepare separately and mix it when you are ready to eat and enjoy!

  • Skill level: Easy
  • Serves: 6-7 people
  • Preparation time: 15mins - overnight (depending on how long you wish to marinate the chicken)
  • Cooking time (for the chicken): 15-20 mins (including cooling time)
What you will need:

For the marinade/dressing:

2 tbsp olive oil
juice of 1 lemon
2 tbsp water
2 tbsp red wine vinegar
small bunch of fresh parsley, chopped
2 tsp dried basil
3 garlic cloves, peeled and minced
1 tsp dried oregano
1 tsp salt
1/2 tsp cracked pepper
2 boneless chicken breasts, cut into large cubes

For the salad:

1/2 iceberg lettuce, chopped
3 inch piece cucumber, chopped
2 tomatoes, chopped
1 red onion, peeled and finely chopped
1/2 cup of olives, pitted and chopped

How to make:

1) Place all the ingredients under 'for the marinade/dressing' except for the chicken in a clean jar or container that has a lid. Shake the jar/container really well to ensure the marinade/dressing becomes well mixed

2) Add half the marinade onto the chicken, and reserve the other half for the dressing. Cover the chicken and place into the fridge to marinade (can leave for a minimum of 15 mins up to overnight if you like). Place the dressing in the fridge too ready for use

3) When ready to use, heat a griddle over medium/high heat, add the chicken and cook on both sides of the chicken until it has cooked (around 10 mins depending). Remove onto a plate and allow to cool

4) Whilst the chicken cools cut the ingredients under 'for the salad' and place in a bowl

5) When the chicken cools, chop into cubes and place over the salad. Add the remaining dressing and mix well and serve immediately

If you wish to prepare this in advance or for a few days, leave the chicken separate, as well as the dressing, and only when you are ready to eat, add the dressing and enjoy the deliciousness of this salad!
