One pot pasta dish


This is perfect for those who want an easy, delicious and hassle free dish - only one pot to wash up, and who doesn't love having less mess to clear up? The balance on this pasta dish is just perfect, tangy yet sweet - hope you give it a go and let me know what you think.

  • Serves: 5-6 people
  • Preparation time: 5 mins
  • Cooking time: Altogether approx 35 mins
What you will need:

2 tbsp olive oil
4 small onions, peeled and chopped
4 garlic cloves, peeled and finely chopped
1 tsp minced garlic
1 inch ginger, peeled and finely chopped
1 carrot, peeled and finely chopped
300g minced meat
3/4 tbsp salt
1/4 tbsp black pepper
1/2 tbsp ground cinnamon
1 tbsp mixed herbs
1/2 tbsp smoked paprika
1/4 tbsp ground ginger
1/4 tbsp chilli powder
1/4 tbsp kashmiri chilli powder
1/4 tbsp turmeric
1 tbsp oregano
1 red bell pepper, de-seeded and chopped
1 yellow bell pepper, de-seeded and chopped
1/2 cup frozen peas
2 x 500g passata
2 tbsp tomato puree
1 chicken stock cube
1 tbsp pomegranate molasses (or balsamic vinegar)
2 tbsp brown sugar
400g dischi volanti pasta (or any other kind)
1/2 cup - 1 cup hot water (adjust accordingly)
Optional: chopped parsley, grated cheese

How to make:

1) In a pot, heat up the olive oil over medium heat

2) Add the onions, garlic and ginger, and sauté until start to brown

3) Add the carrot to the mixture and cook for a further few minutes

4) Add the mince meat to the pot and cook until the meat browns, 5-7 mins

5) Add the salt, black pepper, ground cinnamon, mixed herbs, smoked paprika, ground ginger, chilli powder, kashmiri chilli powder, turmeric and oregano. Mix well and cook for a further few minutes

6) Add the bell peppers and frozen peas, and mix well. Cook for 5-10 mins until the peas start to soften up

7) Add the passata to the pot, as well as the tomato puree and chicken stock cube. Mix well and cook for 5 mins

8) Add the pomegranate molasses and brown sugar. Mix well. Taste and adjust to ensure it is balanced (you may need to add more salt, more sugar, or more pomegranate molasses according to your taste)

9) Add the pasta to the pot, and let it cook for around 15 mins (or until the pasta has cooked). Mix in between this time and add the hot water wherever necessary. Whenever the mixture seems to be drying up, don't be afraid to add the hot water

10) Once the pasta cooks, taste and adjust seasoning if necessary, sprinkle with parsley and/or cheddar cheese, and serve
