Chicken stock rice with spiced yoghurt chicken

Oh, how hard it was for me to come up with a name for this dish! It was basically a sort of imaginary theory in my head, which I made up along the way - only to discover an absolutely delicious dish!! It is so yummy that my family have asked me to make it again for my sister to taste when she comes over. It is like a food fusion, arab style rice with an almost chicken tikka flavoured chicken. You will love it!

I recently purchased a pressure cooker, for my mother, lol but somehow I feel I am using it more than she is! This dish was made using the pressure cooker, but you can still make it without it. It just means you will adjust the cooking time of the chicken for around 20-30 mins, or until it cooks through.

Ladies of Light Tea Party

You may remember last year's ladies of light tea party, whereby I did my first ever catering for it. This year's tea party was an Afro/Caribbean theme due to Black History month. It was beautiful mashAllah. I was asked to make a Jamaican potato salad and a coconut rice salad. Alhamdulilah they turned out better than I had hoped. Hope to share the recipes with you soon.
