Lamb karahi

I had the great opportunity to learn how to make a few traditional dishes with my friends mother, a great cook who has been making delicious dishes for years! This is one of the dishes she taught me and I was so excited to recreate it and share it with you. It is very straight forward and so yummy!

  • Serves: 8 people
  • Preparation time: 10 mins
  • Cooking time: 45mins - 1 hour
What you will need:

1.5kg lamb pieces with bones
juice of half a lemon
4 heaped tbsp greek yoghurt
1 + 1/2 tbsp curry masala powder (Alamgeer brand recommended)
1 + 1/2 tbsp coriander powder
1 tbsp paprika
1 tbsp cumin powder
1/4 cup vegetable oil
juice of half a lemon
7 garlic cloves, peeled and minced
3 inch ginger, peeled and minced
1/4 cup vegetable oil
3 onions, peeled and sliced
1 tbsp salt (or according to taste)
3 medium tomatoes, grated or minced
handful of fresh coriander, chopped

How to make:

1) Wash the lamb with cold water. Place the lemon juice over the lamb and mix it in. Set aside until ready to use

2) In a big bowl, add the greek yoghurt, curry masala powder, coriander powder, paprika, cumin powder, vegetable oil, lemon juice, garlic and ginger. Mix well. Add the lamb pieces and mix well until well coated

3) In a karahi/wok/pot place the vegetable oil over high heat. Once the oil is very hot add the onions and mix until they become a little bit soft (3-5 mins)

4) Add the meat mixture and mix well. Add the salt and continue mixing from time to time for 15 mins over high heat to allow the mixture to dry up a little bit

5) Add the tomatoes, mix and bring to a boil for a minute or so. Reduce the heat to low, cover and allow to gently cook for 40mins to 1 hour, or until the meat is tender. Be sure to mix in between to avoid it sticking

6) Taste and adjust the salt if needed. Add the handful of fresh coriander. Turn off the heat and keep covered ready to serve

It is as simple as that, yet so so so delicious! You have to give it a try to see what I mean! Enjoy! :)
