No bake strawberry cheesecake

Ingredients

For the cheesecake
  • 10 digestive biscuits, made into crumbs
  • 100g unsalted butter, melted
  • 400g cream cheese
  • 75g caster sugar
  • 1 tsp vanilla extract
  • juice of half a lemon
  • 200ml double cream
  • 400g strawberries
For the strawberry coulis
  • 400g strawberries
  • 4 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Directions

This is a straight forward no bake cheesecake topped with a delicious strawberry coulis. You can make this in advance ready to enjoy every bite! My family thought it was a cheesecake I had bought, that is how delicious it was. Highly recommend you give this a try!
  1. Line with greaseproof paper a 20cm springform tin on the base and sides
  2. Add the biscuit crumbs with the melted butter and mix till well combined. Place onto the base of your lined tin, and press down until you form an even compressed biscuit layer. Place into the fridge to chill
  3. In a stand mixer, or in a bowl, add the cream cheese, sugar, vanilla extract and lemon juice and whisk until a smooth consistency
  4. Add the double cream and whisk until well combined
  5. Cut half the strawberries into small pieces and the other half slice lengthways. Line the edge of the tin with the sliced strawberries, and add the other chopped half into the cream cheese mixture. Fold well
  6. Add the mixture over the biscuit base, pushing into the sides to go between the lined strawberries. Cover with cling film and put back into the fridge to chill
  7. Meanwhile, make the strawberry coulis by chopping the strawberries and adding into a pot over medium heat. Add the sugar and keep mixing, pressing the strawberries to speed up the breaking down process. Add the vanilla extract and continue mixing until the strawberries disintegrate and soften
  8. Remove from the heat and add the lemon juice. Strain through a sieve to ensure it is nice and smooth
  9. Once the cheesecake is chilled, add the strawberry coulis over it and leave it for 4-5 hours or overnight until read to serve

This cheesecake is sooo yummy, you want to close your eyes and savour every bite! You may wish to top the cheesecake differently, whatever you decide - I hope you give it a go and enjoy :)
