Tabooli (salad)

Ingredients

  • 0.33 cup bulgar wheat
  • 1 cup olive oil (roughly)
  • 1 onion, peeled and finely chopped
  • 1 tbsp salt
  • 0.5 tbsp cinnamon
  • 2 tomatoes, finely chopped
  • 2 lemons
  • 2 bunch's of parsley, washed and very finely chopped
  • Optional: some mint leaves, finely chopped

Directions

I cannot believe that 57 recipes have been posted on the blog, and I still haven't posted a tabooli recipe, when it is the most yummy and popular side salad you would ever want!! Love tabooli, and if you try it, you will understand why! I never make it with accurate measurements, I just put the dressings according to how much I feel is needed, but for this time, I measured out everything so I can write it all up for you.
  1. Wash the bulgar wheat a few times with warm water, draining after each time, then place into a large bowl
  2. Put the olive oil over the bulgar wheat, enough to soak the bulgar wheat (decrease or increase the olive oil as necessary)
  3. Place the finely chopped onions over the bulgar wheat, followed by the salt and cinnamon. You can mix these altogether at this point
  4. Place the juice of two lemons over the mix, and begin to finely chop the parsley and optional mint leaves
  5. Place the parsley over the the bulgar wheat in the bowl, but do not mix until ready to serve. Taste before serving, and adjust olive oil, lemon or salt as required for your taste

I used 1 cup bulgar wheat when trying to measure out for you guys, but I felt it was a little too much, and for that reason I decreased it in the recipe to 3/4 cup. I really hope you make this salad, as it is healthy, refreshing and most importantly...super tasty! Enjoy :)
