Simple chickpea & vermicelli soup

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, peeled and chopped
  • 4 garlic cloves, peeled and minced
  • 1 inch ginger, peeled and minced
  • 0.75 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp cinnamon powder
  • 3.5 cups of boiling water
  • 1 chicken stock cube
  • 1 x 400g can chickpeas
  • 2 handfuls crushed vermicelli
  • 2 tbsp tomato puree

Directions

I wasn't feeling too well, so put together a few ingredients to make a tasty yet beneficial soup. It is so easy to make and you can add whatever you have on hand to give it even more deliciousness.
  1. In a pot, heat the oil over medium heat. Add the onions, garlic and ginger and cook for around 5 mins until the onions become translucent
  2. Add the salt, black pepper, cinnamon and mix in well for a minute
  3. Add the water, chicken stock cube and chickpeas. Mix in well, then add the vermicelli, turning the heat up to high, followed by the tomato puree. Allow the water to boil for 3-5 mins, taste and adjust seasoning. Turn off the heat and leave for 2-3 mins before serving

It really is as easy as that, and the flavour of the soup is delicious alhamdulilah. Enjoy :)
