Pear, cardamom & sultana cake

Ingredients

  • 125g unsalted butter, at room temperature
  • 125g light brown sugar
  • 2 eggs
  • 250g self raising flour
  • 1 tsp ground cardamom
  • 4 tbsp milk
  • 500g pears, peeled, cored and thinly sliced
  • 125g sultanas
  • 1 tbsp honey

Directions

I personally love pears, especially in cake, they go all soft and oh so yummy. :) So this recipe will be a delight to fellow pear lovers. Enjoy :)
  1. Beat the butter and sugar together in a mixing bowl, until it turns pale and creamy
  2. Gradually beat in the eggs, one at a time, until well incorporated
  3. Sift the flour and add the ground cardamom together, then fold into the mixture, alongside the milk
  4. Keep on the side around a third of the pear slices, and roughly chop the rest. Fold the chopped pears with the sultanas into the mixture
  5. Spoon the mixture into a greased 1kg loaf tin, with the base and two long sides also lined with oiled greaseproof paper.
  6. Spread the surface level of the mixture to make it even
  7. Arrange the reserved pear slices along the centre of the cake, pressing them in gently. Bake in a hot oven, at 160 degrees Celsius (gas mark 3) for 1 + 1/4 hours to 1 + 1/2 hours, or until the skewer inserted into the centre comes out clean
  8. Remove the cake from the oven and leave to cool in the tin for 10 minutes. Then loosen the edges and transfer to a wire rack, peel off the lining paper and leave to cool completely
  9. Drizzle the surface with the honey and enjoy :)

Had to take this quick shot whilst guests were eating the cake lol This is definately worth a try, I was worried the cardamom taste would be too strong, but it was just right. Enjoy :)
