Nutella cupcakes

Ingredients

For the cupcakes
  • 100g plain flour, sifted
  • 20g cocoa powder, sifted
  • 140g caster sugar
  • 1.5 tsp baking powder
  • 1 pinch of salt
  • 40g unsalted butter, at room temp
  • 120ml whole milk
  • 1 egg
  • 1 tsp vanilla extract
  • 120g nutella
  • 1 handful hazelnuts to decorate
For the frosting
  • 250g icing sugar, sifted
  • 80g unsalted butter, at room temp
  • 25ml whole milk
  • 80g nutella

Directions

So if you live under a rock, you may have not heard of Nutella. This is a hazelnut chocolate spread which is simply delicious! So anything made from nutella is bound to be scrummy...hence why I chose to make nutella cupcakes :)
  1. Place the flour, cocoa powder, sugar, baking powder, salt and butter into a bowl and use an electric whisk on a slow speed until you get a sandy consistency and everything is well mixed
  2. Slowly pour the milk, and beat until all is well mixed
  3. Add the egg and vanilla extract and beat well, ensuring you scrape off the sides of the bowl
  4. Spoon the mixture into paper cases in a cupcake tin, filling to approx 2/3 of the paper case. Bake at 170 degrees Celsius for 20 mins
  5. Leave to cool slightly in the tray before transferring onto a wire rack to cool completely
  6. Once the cupcakes are cold, hollow out a small section in the centre of each cupcake and fill with nutella chocolate
  7. Make the frosting by beating the icing sugar and butter with an electric whisk until they come together. Slowly add the milk, and mix well, then turn the speed to high and beat for at least 5 mins until the mixture is light and fluffy. Manually stir in the nutella until evenly mixed, and pipe them onto the cooled cupcakes. Decorate with hazelnuts and serve

Yummy yummy, these cupcakes were a big hit! Guests loved them alhamdulilah, said it was one of the best they have ever tasted. It really isn't a difficult recipe, so do give them a go and enjoy :)
